Store in a cool and dry place. Stovetop Cooking Instruction: Put one package of pasta into 4 qt (3.78 lt) of boiling water and add a tbsp of salt. Stir occasionally and cook for 15-16 minutes until desired tenderness is reached. Rinse with cold water. Drain well. For best result, rid pasta of surface moisture. Can be served hot or warm with any kind of pasta sauce or in your favorite pasta recipes, hot soup, in salad, stir-fried, or as a casserole. Use it as you would like any regular pasta. The good texture of Tinkyada can withstand quite a bit of over-cooking. Quick and Energy-Saving Cooking: Cook 1 to 2 minutes in boiling water. Switch off stove. Cover pot for about 20 minutes. Ready to serve.

Whenever you cook with GF pastas, YOU MUST COOL IMMEDIATELY when it's al dente to prevent it from overcooking and falling apart to mush. This is a different technique than cooking with wheat-based pastas, but pastas that are rice-based have to be managed differently, for good reason. I'd wager the reviewers who have slammed GF pastas didn't cool it immediately. It doesn't have to be cold, but you do have to drop it below the cooking temperature, so drain it and return it to the pan and fill the pan with lukewarm tap water. The heat from the pan will keep it at a good serving temperature, but the lukewarm tap water will cool the pasta below cooking temperature to keep it from breaking down. This pasta tastes MUCH better than the corn-based GF pastas (De Boles, Schar, etc.) In fairness, this product doesn't hold up as well as Tinkyada brand does for a GF pasta, though.Read more ›
If one did not know it was not "regular" pasta, they would not tell the difference. It does not get mushy although it takes alittle longer to cook and you need to stir it often so it doesn't get stuck together. I ordered a case of 12 because whenver you have to have a special diet the costs in the health food stores can be outrageous, and this way you get a better price (even with shipping)
