Ms. Kern's book, 'Tips on Modern American Dining Etiquette' gives practical information about all aspects of dining. I found the section on 'How to Eat Certain Foods' especially helpful. --

About the Author
Ruth Kern grew up at a time in America when ladies wore hats and white gloves when they attended Sunday church service. Dinner was served after church, in the dining room and on a properly set table. Presentation balls and strict codes of behavior were the norm of the day.
When she started college in 1961, every evening meal at her sorority house was a formal affair served by uniformed waiters. As a Home Economics major in college, Ruth increased her knowledge of dining etiquette.
In the late sixties, all of the rules of etiquette and social behavior that Ruth had grown up with were temporarily thrown out and new ways of living were explored. As we were approaching the new millennium, there seemed to be a movement in America to go back to a more formal time where there were rules that everyone knew and most observed.
Ruth realized the importance of her knowledge of some of these old rules. She wrote this book on dining etiquette to teach the 'rules of the table' to Americans who had not had the opportunity to learn them.
Because this book was so well received, she decided to write a second book; this one was about American 'wedding' etiquette. She has since produced three vidoes, 'American Dining and Entertaining Etiquette,' 'American Etiquette for a Formal Party' and 'An Etiquette Afternoon with Ruth L. Kern and Stephen Legg.'
She is in the process of producing a new video, 'American Etiquette for Business Dining' and will continue producing videos and books as long as there is so much interest in etiquette.
Ruth wrote her books and produced her videos to teach Americans about the etiquette of our culture, but she has been gratified to see that international people are also interested in learning about American etiquette.
Her books and videos have been sold internationally. Her videos are being shown on television as well as in etiquette training classes and universities around the globe. They are even being used in the People's Republic of China to teach American etiquette to Chinese students.
