Great Introduction to Tofu,

This book offers great recipes that use tofu to supplement (and occasionally replace) traditional ingredients that are not good for us. A perfect example; using tofu to replace half the eggs in an egg salad mix reduces cholesterol without affecting the taste at all. It is a great way for us non-vegans to be a bit healthier without feeling like we've had to give something up.
