I purchased this knife over a year ago and have been more than happy with it. I regularly bring it to dinner parties for prep work where people are amazed at the texture, after using the Gyutou they are needing one.

I do take special care of this tool including no dishwashers; and dry immediately after washing; steel regularly; and sharpen when needed so the knife looks new.

I bought this knife as a gift for my brother, who is a sous chef. He almost didn't get it, because it is absolutely stunning and my scrooge instincts almost took over. I fought against the urge to keep it and with my conscience giving me a Marley-esque rejoinder, I managed to get it wrapped and hopefully that will let me resist long enough to actually give it to him.

Simply put, it's sharp. It's balanced. It's gorgeous.

I have worked with folks (I'm a pastry chef) who swear by this knife maker and I have seen these babies in action. They hold edges very well although as with all Japenese knives you have to be more careful than you would with their hard-steel euro counterparts. Please use proper sharpening techniques and baby your blades!

This knife came with a shaving-sharp edge. It's ridiculously sharp.

It's sturdier about the blade than I expected, which the layered steel adds I suppose. I haven't given it a try myself, because it feels like it will be quicksilver fast on a board and I don't need further temptation to keep it.

Also, it is freaking beautiful to gaze upon. This, of course, is the least important thing by far when you're picking out a blade, but having this in your arsenal and as your workhorse chef knife will make the prep that much more fulfilling. It is always uplifting to work with beautiful gear.

It doesn't come with a fancy wooden/bamboo sheath, but is certainly worthy of one.

I'm a professional chef and have used knives that cost 5x this and for the performance it provides, it well exceeds the prices. This knife will last anyone a long time if its taken care of and a line cook doesn't drop it. Enjoy!!!
