Tom Douglas is an American chef, restaurateur, and writer. He is well known for helping to define Northwest cuisine and igniting the Seattle restaurant scene, winning the James Beard Award for Best Northwest Chef in 1994. Since 1989, Tom has opened five of Seattle’s most popular restaurants: Dahlia Lounge; the Greek-inspired Lola; Serious Pie pizzeria; Palace Kitchen; and Pike Place Market’s iconic seafood restaurant, Etta’s. He also owns Dahlia Bakery, famous for its Triple Coconut Cream Pie.
Tom is the author of Tom Douglas' Seattle Kitchen, named Best American Cookbook by the James Beard Foundation, Tom's Big Dinners, and I Love Crab Cakes! He bested Masaharu Morimoto in an episode of Iron Chef America and was named 2008 Bon Appétit Restaurateur of the Year.

Great for removing salmon bones,

If you cook fish and want to remove bones, look no further. I used to use a set of small pliers to remove the bones. These do a better job at grabbing the bone without damaging the flesh and do a much quicker job as well.

These kitchen tweezers have a nice substantial feel to them. The metal is a heavy enough gauge that they don't bend when pinched. Importantly, however, the metal is not so heavy as to offer too much resistance to pressure. The tips are angled so that they come to a sharp point, and beveled so that they have a thin crisp edge. I was able to deseed some lemon slices in nothing flat without gouging up the slices.The big unknown so far is the quality of the stainless steel. The tweezers are described as being "Made of high-quality stainless-steel." So the question becomes, "high-quality" as compared to what? Some grades of stainless steel are more resistant to corrosion than others. It will be interesting to see if this implement starts showing rust spots or corrosion over time. Pros: Cool little gadget. Cons: Not much information regarding the quality of the stainless steel. Because there is no information on the grade of the stainless steel, and I have yet to see how these tweezers will hold up over time, a 5-star rating does not seem appropriate.

I purchased this item to remove pin bones from salmon. The ease in which they remove the bones was beyond my expectation!
