Not a book to be judged by its cover , or shape, this has the best set of eggplant recipes that I have ever seen, and my cook book collection is rather extensive.

Everything eggplant about this very versatile vegetable. If you are not an Eggplant afficiando and want to experiment, this recipe book gives you the chance to become an epicure. It shows how you can grill it, fry it, stuff it, roll it, bake it, or braise it. Eggplants goes well with the vetetables that grow alongside it in the garden ... its natural companions: tomatoes, bell peppers, and zucchini, combined with garlic and olive oil. Oregano, basil, and mint are always delicious with eggplant. Eggplant is an economical vegetable. I consider this recipe book a must have for anyone who wants to add some more vegetables to the everyday edibles.

Was a little disappointed with this cookbook. I find the binding method inconvenient for a cookbook as it will not open up and stay flat. The first time I try a recipe, I like to keep the recipe page open in case I have to refer to it. There was not the variety in recipes I had hoped to find.

Bought this for a friend, mostly as a joke. Not sure there are any recipes I'd make, but then, I don't tolerate eggplant all that well - digestive upset sure to follow. If you like the veggie, go for it.
