With so few books solely on rum in exsistance, this wonderful book will never lose its potency. It doesn't give much history, focusing on fabulous recipes from all over the globe -- the way it should be. If you enjoy rum, you must add this to your collection. Bergeron was long considered the American authority of rum -- this book is proof he was.

Any serious chef will love this cookbook. It is a collection of recipes that include rum that over the years were sent to Victor Bergeron by fans, rum producers, and friends. Many come from the Caribbean. It was edited and tested by Shirley Sarvis. She once told me regarding cookbooks, that if there was one outstanding recipe, a true keeper, then it was worth the price. Well, there are many "keepers" in this book. The sugared rum apple cake on page 54 is a knock out, or the rum pineapple upside down cake from fresh pineapple. But there chicken, fish and meat recipes. A great one for rum spare ribs, The drink recipes are great. Try a Queens Park Swizzle if there is no chance you will later try to operate a motor vehicle. (It was outlawed at Trader Vics for that reason.) I have dozens of cookbooks, this is my favorite.
