Great pan! But don't overheat it! I overheated mine today and it tried to kill me :) I heard what sounded like a gunshot, and then a bullet ricocheting around my kitchen .....

The Rivet blew its cap off explosively. Reminded me of a scene from Das Boot, where the submarine is failing from overpressure, and rivets are going off and wounding or killing the sailors ....

I have this series, and also the ones recommended by Americas Test Kitchen. this one is better by far. It is heavy and has strong and even heating. It has a flat bottom (as opposed to the ATK one), and also the silicone handle is removable so it is OK in the oven. I have tried many many nonstick pans, this one is very nonstick, and is also better than my All Clad nonstick pans (and WAY cheaper). But this series.

I cook primarily on high quality clad stainless steel, carbon steel and cast iron. However, for some things, only true nonstick will do. That's where these frypans from Tramontina enter. I use them primarily for stir frying and sautéing vegetables. They're unsurpassed for omelets and scrambles, too. I fry my eggs on carbon steel crepe pans, but my dude prefers the 8" Tramontina.

They're quite substantial, made of thick, heavy aluminum. They strike an almost perfect balance between responsiveness and heat retention. The pans are heavy enough that even the smallest 8" pan isn't the least bit tippy, despite having a relatively long, heavy handle. They're also light enough that I can toss vegetables and rice with one hand. That's the beauty of aluminum. Even when it's quite thick as these pans are, it is very lightweight.

The nonstick coating is far superior to other inexpensive pans, and I consider these in that category. I'm not gentle, have been known to use metal utensils (almost exclusively) and mine are still holding up well. My pans are 6 years old and still very much nonstick, although they do require a bit of oil now. Not much, just a little, and only for eggs. Everything else slides right out of the pan. The only problem I've had has come from family members who think it's fine to heat empty aluminum pans on med-high or high. It's not, and mine have warped as a result of this abuse. I've replaced the 2 warped pans and now jealously watch when others cook.

If you treat these pans right, and follow the cooking/cleaning instructions, you'll get many years of happy cooking from them. Use wooden or silicone utensils, nothing higher than medium heat when the pan is dry, and hand wash.

I love my 12" fry pan! It is far superior to any I've owned in the past and it seems to be holding up well. I've had it for several months and cook in it on pretty-much a daily basis. I read one review that said it wasn't appropriate for glass top stove. Not true at all. It works just fine on my glass top.

I seasoned the skillet as recommended. I do not heat the skillet too quickly and do not exceed a high medium heat. The skillet has performed well. The food does not stick very much. Whatever food remains in the skillet is easily brushed off. So far, this skillet has performed better than any other non-stick pan I have purchased.

I have a few of these pans ranging in sizes and I really like them because they are similar to what we had as pans in the restaurant industry. Good weight, handle, etc. I wish they had matching lids..maybe they are out there?

Haven't tried cooking with it yet, but have three immediate observations:

- It's "pretty", but it's very light weight for a pan this size.... not sure if it will hold up to high heat without warping and/or scorching.

- My gas stove has a six-pointed grate and since the HANDLE IS HEAVIER THAN THE PAN. It literally tips over and falls off the stove if it isn't positioned very carefully!! The handle is long, and on my stove it needs to be at a very awkward angle to balance empty on the grate for pre-heating. It's kinda dangerous! (On a flat countertop it does stay flat.)

- The usable size is a full 12" inches with a 9.5" flat center area, but the rim flares at the top edge to 12.5 inches, so a generic 12" glass lid wobbles and doesn't seat properly for steaming grains, etc.

It should be perfect for flipping large dinner crêpes, poaching quantities of eggs, lightly sautée-ing fish etc., but I have doubts that it will last as an everyday high heat browning pan.

Update: After testing it for a week, my suspicions have been confirmed... It is OK for some foods and it IS non-stick... BUT,
It isn't heavy enough to distribute heat evenly. On test crêpes, they do flip easily, but you can clearly see scorch marks where the gas flame hits the bottom. I'm removing one star... and will continue to use caution with it.

Pan was the large size that I wanted. Easy to clean. Originally worked very well, with even heating. But: It warped after a couple of months of normal use and now doesn't lie flat on our glass-top cooksurface. Result is that items in the center of the pan cook much more quickly than those around the edges. Useless for french toast or pancakes, still OK for stir fry. I'd highly recommend it for a gas stove, but for a flat cooking surface not so much.
