This book is a one-of-a-kind addition to any cook/chef's library. The recipes are interesting and varied, the cooking and food tips invaluable and the easy to read format is hugely appealing. The scientifically-based tips are practical and cannot be found anywhere else in this type of a user-friendly format. Highly recommend this book for cooks of all abilities!

This cookbook is well organized, fun to read, with all the basics of cooking and uses for the home cook, whether you are a beginner or advanced cook. George Erdosh provides sound reasons for what makes good food even tastier, e.g., the essentials of browning, adding flavors with herbs and spices, techniques for steaming fish, etc. He also shares the successes of presentation for entertaining along with all his great recipes. Great book to add to your kitchen library.

This is an excellent choice for all levels of cooks. Each chapter gives a few pages of information about cooking science and "how to do it." The recipes are interesting and come from various cuisines. Dr. Erdosh is very knowledgeable and writes in a pleasant folksy way, informative but not pedantic.
