we added about 3/4 of the maltodextrin pack to each brew, as it produces a thicker and creamier feel. the priming sugar carbonated the first batch in bottles after 10 days, but the flavor continued to evolve for an additional two weeks after that. the end result of the first batch was a tasty, coffee malt flavor with a slight bitter hop and a frothy head. it had that yeasty flavor common with homebrew, possibly because we waited the full two weeks to rack the first batch off the yeast bed when it was actually ready to rack off after just one week. the second batch is currently awaiting kegging in a secondary fermentation carboy, so we'll see if that flavor was avoided this time around.
in all, this is a good beginner kit at a decent price. fermentation is strong with dry yeast pitched directly into the carboy, and it carbonated perfectly with the included ingredients. not much to screw up in this one, so if you're new to the wonderful world of homebrew, this is a great place to start.
update - 1/11/16
we kegged the second batch of this porter over the weekend, and it accepted force-carbonation very well in the 1/6 barrel sanke keg. after 12 hours of occasional agitation at 20-25psi, we purged the keg and reduced pressure to about 12psi, and let it sit for another 48 hours.Read more ›
