Product Description

The USA Pans Pullman Loaf Pan & Cover is constructed of aluminized steel, the material of choice for commercial bakeries. Loaf Pan measures 9 x 4 x 4 inch. The size and design of the Pullman pan makes it ideal for making squared bread loaves and brioche. The metal thickness of this pan has been selected to allow for even heat distribution and maximum service life. An important and unique feature of this pan is its corrugated design. Corrugation maximizes the pans strength and prevents warping, denting and other effects of everyday use. Plus, it also minimizes surface contact which translates into evenly baked products that are easily released. No need for messy and unhealthy oil and grease. This pan is coated with Americoat. Americoat is a proprietary silicone coating. It provides a clear, non-stick, non-toxic baking surface, specially formulated for superior baking. It's FDA approved; it does not contain PTFE's or PFOA's. It is not recommended to exceed baking temperature of 400 degrees F. Easy care. To clean, simply wipe clean after use; soap and water are okay to use. It is not recommended that pan be washed in dishwasher because harsh chemicals can cause the non-stick material to breakdown in time. Dry pan completely, after cleaning. USA Pans is the newest line of bakeware developed by American Pan, the world's largest manufacturer of commercial bakeware. Pans are made of 65% recycled steel. Made in Pittsburgh, Pennsylvania, USA. Lifetime warranty. Note: The design of the lid is not a snug fit, its purpose is to prevent it from sliding off the container, this is not a snug fit to enable access to the bread at high temperatures and during baking.

It's made in the USA of heavy duty high quality metal.
Jacqueline Clonan
I think the smaller pan is a good size to make a loaf for a gift, or for one or two people who don't eat a lot of bread.
Amy Grace
It works great for both regular and gluten free bread recipes.

Received my USA made Pullman pan and didn't waste any type breaking it in. Used my bread machine to do the hard work: one hour; put the dough in the pan, the cover on and baked for 30 min. Beautiful evenly browned crust on all four sides, and the quickest bake and clean up ever! I am very very pleased with the performance of this pan. Did not have to wash it afterwards -just a simple wipe with a paper towel. It released the loaf of bread that easily. The 9 x 4 x 4 size is excellent for two. USA Pans recycles and the price is excellent!

This pan is the answer for baking castella cake as well as some very particular and difficult to bake bread, such as pain de mie and Japanese white bread.

I love my small covered Pullman pan. It has Americoat on it. This is not teflon coated. I grease the pan well with crisco, the bread always just drops out of the pan with not problem. You can make any type of bread in it you wish. You do not have to have the top on if you do not want to. I use the pan for all of my yeast breads, that way the bread raises and I end up with the square sandwich type of bread. Be sure to read the instructions to your recipes carefully, the only cookbook I have so far the mentions Pullman pans,is my Jewish Bakers cookbook. Sometimes I bake the bread about half way through, and take the top off for while to egg wash it and brown it alittle more, then I put the cover back on.
The price of these pans are non-compariable to other pans. These pans are heavier than the average bread pan by far. The clean up is is very easy, just wipe out with warm soap and water, and dry real well. You can not soak these, pans, nor should you have too. I just have a habit of soaking my bread pans when I take the bread out, to lessen the work to cleaning regular bread pans. I tried soaking these pans, I came back to wash it and it had no water in it! The water all seaped out of the seams of the pans where the machines bend the metel. Surprise.
Again, worth the price, worth the ease of cleaning, and worth the quality of bread you receive from these pans.
Sincerely,
David Kahle Super Chef

P.S. The lids are supposed to click or lock on when pushed on all the way.

Got my USA pullman pans (13" and 10") and I'm very satisfied with the quality of the pans. I have not baked with the 10" pan (aka 9x4x4). I like the smooth coating and the heavy feel of the pan. The lid is of similar weight and quality. The pans arrived in good condition-no dings or scratches.

I made bread in the larger USA Pullman Pan and it came out really well. I think the smaller pan is a good size to make a loaf for a gift, or for one or two people who don't eat a lot of bread. I prefer the larger pan for day to day use.

I have been gluten-free for about 7 years now and making bread in this loaf pan is the first bread that I have baked that I am proud of. It looks better than any loaf of store-brought bread. I wish I knew how to post a picture, it was something to behold. Only another Celiac could really understand. But I am looking forward to trying different mixes and even baking a cake with this pan. And I am really glad that this is an American-made product.

I have 4 other bread pans, but this is the only one I use now to bake my gluten-free loaves. It's a perfect size and the cover helps the bread cook properly without getting too burnt. I've used it without the top as well and the bread turns out well, just not as square. No trouble with sticking to the pan. The narrower width provides more structure to allow the GF dough to rise more. It's heavy-duty steel. excellent quality and performance. highly recommend.

I bought this pan to bake gluten-free bread, so that its shape would be a bit more uniform and preserved. In regular pans GF bread can shape a bit wildly, leaving it not well-suited to cutting evenly or for sandwich use. This pan is great for baking evenly, turning out a uniformly shaped loaf, and for general handling. I have both sizes, and definitely recommend them.

I saw this mentioned on the King Arthur Flour website, and fortunately found it on Amazon.com. This tall, narrow pan helped me to bake my first good loaf of gluten free bread for my husband (recently diagnosed with celiacs). The special sizing of the pan helps the bread to rise higher. It is heavy weight and the bread really did just fall out, with a small amount of loosening. I love it.
