Product Description

Take temperatures on the fly with a response time that's second to none. Whether you're cooking at home or working in a professional kitchen or lab, the Epica delivers not just the speed, but also the accuracy, durability and convenience you require.
Lightning Fast Readouts
The exceptionally fine gauge of the stainless steel probe means you can get results in as little as 5 seconds, saving you time, while its generous length keeps your hands at a safe distance from hot meats or liquids. An easy-to-read LCD panel displays your choice of Fahrenheit or Centigrade. The Epica's range is from -58° to 392°F (-50° to 200°C), and it's accurate to within 1.8° between -3.8° and 247.8°F (1° between -19.9° and 119.9°C).
Min./Max. Temperature Memory
The Epica thermometer can also record and display the highest and lowest temperature sensed during the current session. This smart feature lets you test whether a consistent temperature is being maintained in deep-frying oil, poaching liquids, ovens, dishwashers and refrigerators.
10 Minute Auto Shutoff
No need to worry that you'll accidentally drain the battery by forgetting to turn the thermometer off before putting it away. The Epica will power down after 10 minutes of inactivity.
Compact and Durable
The handy pocket size lets you carry the Epica anywhere, so it's a great choice for a picnic or back yard barbeque. Made of high-density, food-grade plastic, its shaft has no joints where it could break or allow microbes to lodge. Rubberized control switches and a tough LCD panel complete this rugged construction. It has an international water resistance rating of IP65, making it safe to go in the dishwasher (with water up to 190°F).

This long stem digital thermometer is a nice kitchen tool. The range is perfect for cooking, -58 to 392 degrees F (not a good choice for fryer oil, but excellent for candy). It is important to be certain meat is cooked to the proper temperature; this is a good tool to quickly measure doneness.

The thermometer does indeed respond quickly to temperature changes. It takes about 12 seconds to stabilize. Compared to an industrial foodservice thermometer I use regularly, this is about 3 seconds faster.

This is not an oven thermometer. It cannot be put into an oven or a grill, the plastic will melt.

The thermometer is accurate. I tested the thermometer to ice point and it read exactly 32.0 degrees F. Ice point is a standard method used to test thermometers. The test run using a finely crushed ice water bath in an insulated container (in this case I did grind the ice a bit finer than standard - more like snow than crushed ice). Boiling point is not a great test for thermometers, but this thermometer got very close to 212 degrees, a good result.

The stem is long five inches, much longer than most all in one digital thermometers.

I did find it a bit difficult to read the thermometer because the display in line with the probe. I am used to a thermometer where the display is on the end of the stem, meaning I can put the thermometer straight up and down into whatever I'm cooking and read from the top. With this thermometer, the stem has to be put in on an angle and read from the side. Neither is better than the other, it is just a different way of reading the display.

For home use, this is an excellent choice, at an outstanding price.

From an industrial or restaurant perspective there are a few nits to pick with the thermometer.

I bought this tool because it had great reviews. It has worked as expected giving the readout in about 5 seconds. That speed is important because ovens are hot and you will have your hand in there. Using a thermometer has improved my cooking a great deal because I can be more flexible with my cooking temperatures. My wife won't eat under cooked steak and so I tend to overcook it. This tool has almost eliminated that problem allowing me to nail it. I love that I am no longer slicing into the meat to look at it. Before writing this review I used this tool about 50 times.

Features:
°C/°F selection
Splash-proof construction
Min/max temperature recording
10 minute auto shutoff

Accuracy readings:
Ice water: 32.0 °F
Boiling water: 211.1 °F

Specs:
Length of metal probe: 4.75"
Length of body: 7.75"
Length with sheath: 12.75"
Battery: 1x LR44 (included)

Minor cons:
The sheath doesn't click into place (but stays on securely once pushed in)
If held in left hand (to use your right hand for stirring for example), the reading is upside down
When leaving it for min/max temperature recording, you have to set a timer for 9 minutes or so to come back and check on it. The auto-shutoff at 10 minutes resets the recording.

I have been using this instant thermometer for the past month with great results in my bread so it seems to be accurate. It pierces the loaf with ease, takes about 5-7 seconds to record the internal bread temp, then remove, close oven door, read and decide if more baking is needed
or not. It does have a rather small window for Centigrade or Fahrenheit readout which could be a bit larger, but works for me nicely & the price is right. I was not given this as a sample to review as some other reviewers have noted: I bought it and I might add, the Thermoworks thermometers cost nearly $90+, so on my budget this one is fine for my uses. I don't see any issues with keeping it clean if you take care of it properly. The sheath is nice for storage and the battery is still going strong since 12/25/12. Radio shack carries most of these small kitchen tool type batteries...some people are just never happy but don't want to spend money for what they perceive as a perfect product.
There is really nothing wrong with this thermometer for home use. At $19 it's a steal.

This thermometer worked less than a month, for me. I used it twice and it stopped working. I tried resetting and restarting, and still the thermometer did not work. I ordered new batteries to be sure it wasn't the fault of the batteries, and still no luck. And I was unable to return the product to the vendor since I initiated the return one day too late. I am disappointed in the quality of the product and in the small return window. I cannot recommend this product.

Very accurate checking with a crushed ice bath with a little water. Read 32.0 F so I was very impressed, and it obtained that reading within about 5 seconds. No complaints...

Takes a reasonably accurate reading in about 5 seconds making it worthwhile for my purposes. Over or undercook one steak and you'll realize this is worth the money

I have work in various restaurants for a decade and have used some very expensive thermocouples. That said this in not a thermapen or an expensive thermocouple but for the price this is a very good instant read thermometer. Buy it you wont regret it.
