A real find,
By Sherrie "CA baker" (Los Angeles) - See all my reviews

It had been very difficult to find baking parchment in individual sheets. I had been able to find it only on rolls, like waxed paper and foil, and it is very hard to use. It's difficult to tear and won't lay flat on the baking pans. This sheet parchment has worked very, very well for me. It lays flat on the baking pans, nothing sticks to it and my clean up is a breeze. I am very glad to have found it and will definitely reorder when I need more.

Pre-cut, flat sheets of parchment paper are the way to go!,

I've used parchment paper for a number of years, but discovered during Boot Camp at the Culinary Institute of America in Hyde Park that I was an absolute rookie in the parchment paper world.
I had always bought rolls of parchment paper and cussed at cutting it to size and trying to make it lie flat, particularly when making pizza. Our chef nonchalantly picked up a pre-cut sheet while making one of the dozens of practical demos -- I totally lost the point of his demo, but admired the big pack of pre-cut paper, lying flat, and a dream to use. When I got home, I donated my unused roll to a friend who's a much better cook than I am (bit of envy there, I suppose) -- but also gave her a dozen flat sheets from the pack I bought from the professional supply store five miles north of the CIA campus. She was an instant convert as well -- and we amused ourselves for a few days considering who she should give her two unused rolls of parchment paper to. Parchment paper is a wonderful aid in baking, of course, but there three other uses I find particularly helpful. As mentioned earlier, I put a sheet of parchment paper on top of my peel, add the pizza dough, assemble the toppings, cut any over hanging paper off, and slide the pizza off the peel onto the hot stone. The parchment paper will brown but not burn under the pizza, the pizza is easily removed from the stone, and I don't have all of the mess of cleaning up the classic corn meal that used to provide a slippery surface. Second, cooking en papillote, or in paper, produces an elegant, aromatic version of fish, chicken and other foods. The technique is easy: fold the sheet in half, cut out a heart shaped sheet, open it, place the fish, say, into the middle of the heart, add stock or water, and whatever spices that light your fire, crimp the edges all the way around the cut end, folding one side over the other, and bake for 20 or 25 minutes at 425 F until the fish is flaky. Third, parchment paper works wonderfully for non-stick oven roasting & browning without using oils or grease. And, of course, there is no cleanup if you add flavorings like a bit of honey or maple syrup. (I compared parchment paper with Silpat 11-5/8-by-16-1/2-Inch Nonstick Silicone Baking Mat, and preferred the paper for every single use.) "Cook's Illustrated" has tested the professional versions of parchment paper against the types usually sold to consumers, and for almost all uses the consumer version does pretty well. The main differences are really that the professional version is heavier and can stand higher heats and is invariably sold flat and pre-cut. So, buying parchment paper meant for consumer use is just fine for most cooks. "Cook's" downgraded some papers for small size -- they couldn't handle a 12 or 14 inch pizza, for example. This manufacturer offers a larger size of this product as well: UltraBake Parchment Paper Sheets - 15 × 21. But -- shop carefully for price. One can find even the pre-cut versions I like at widely different price points. And -- if you can find a professional supply house, do as my friend and I do, buy a full pack and share the cost and the paper. Robert C. Ross 2010

I put raw meats onto these for a kitchen scale to weight so that the scale would not get messed up. I also put chicken between the layers of the parchment paper sheets then vacuum sealed. A great way to keep frozen things from sticking together.

This paper is just like the much more expensive parchment papers being offered by other vendors, only at a much better price! Comes rolled, so there are no creases; high quality paper. I'm a baker and do lots of cookies and other baked goods and this paper works just great. Very good value.

Parchment Paper,

This item took awhile with shipping, only because it comes from Canada. I work in a bakery and know parchment paper. This product is quality with lots of sheets to a box and a very good price. Not like the rolls you buy off the grocery shelf. I will definitely order from Goldas Kitchen again.

This is a wonderful convenience item. I have used these parchment sheets for baking cookies, bread, and even chicken breasts. The size is perfect for my newly acquired Nordicware 13x18 baking sheets. The price is great too. I was paying between $3 and $4 for a standard roll of parchment paper at Wal-Mart, and quite a bit of it was going to waste due to cutting / sizing to fit my pans. I will definitely order again when this box runs out!

These are slightly larger than my "standard" half sheet pans, so I have to do some folding each time, but my own fault for not measuring more carefully. The quality of the parchment is fine, pretty standard, really. When you get the box, you might want to open it on the end only if you need a storage device for them in your cupboard, and the box works pretty well. Go forth and bake.

A Little Disappointed,

Despite these being flat and pre-cut, they are not 12 x 16 1/2, as advertised. They are more like 13 x 18, so they don't lay perfectly flat inside a 13 x 18 half-size sheet pan. Every time I need one, I must first cut to size or weigh down the edges to prevent curling. What a waste of time. I'm a little disappointed at the inaccurate measure on these.
Can someone at Amazon.com change the description? Despite the inaccuracy, these work well to prevent sticking and help with clean up. Also, they are reusable, so that helps with controlling costs and waste.

Well, how much can you elaborate on parchment paper? I can tell you that the product came on time and it was in good shape. Now for a little pitch on parchment paper since I am already here? Do yourself a favor and buy a box of this. The paper will fit right on to a cookie sheet. No muss, no fuss! Nothing sticking to the cookie sheet, in fact, if you play your cards right, you may not even have to wash the cookie sheet. Now, if you think parchment paper is only for baking cookies... wrong! You can cook any light little dinner in parchment paper. One thing that is common is fish and vegetables! Try it out for fun... now the parchment paper company owes me something for my pitch! Just kidding... I was totally happy with my purchase!

Almost Perfect,
By
This review is from: UltraBake Parchment Paper Sheets - 12 × 16˝ (Kitchen)
I gave this 4 stars mainly because the convenience/performance trumps everything when it comes to parchment (i hate those rolls!) BUT there are a few minor imperfections. (1) The sheets come all rolled up together in a rubber band - i wish they were in a flat box; (2) I have the goldtouch W.S. 18x13 baking sheets and the parchment was still a little larger than the sheet; and (3) the sheets aren't perfectly cut rectangles (just slightly off - you can tell when you fold it in half). That being said, the parchment lies flat after you unroll it and you can still kind of tuck in the sides to fit in the baking sheet. My cookies cooked great and no more trying to flatten that darn parchment!
