I bought Understanding Map Projections with the hopes of better understanding the idea of geographic transformations between datums. I was also interesting in getting some tips on performing projection changes within ArcMap. This book has a few pages on these topics, but not enough to teach me more than I already knew. The majority of this book deals with describing the qualities of various projections. This is definitely useful information if you are trying to choose a projection for data, but does not help if you just want practice with switching between projections. It's a fine reference book, just didn't necessarily give me the help I was anticipating.
