Period Piece That Still Works,
By A Customer
This review is from: Uprisings: The Whole Grain Bakers Book (Paperback)
Uprisings would have earned 5 stars from me, but I do recommend this with a caveat that not all of the recipes work out all of the time. Most do, however, and those ingredients that may have seemed exotic back when are now available in most supermarkets or your local health food emporium. I continue to bake out of Uprisings, but I also love to read it because it's a great way to revisit the 1960s and 70s--a "you are there" type of experience. It is so very earnest.

Good for Vegans,
By A Customer
This review is from: Uprisings: The Whole Grain Bakers Book (Paperback)
This is the book I learned to bake with as a vegan child. I learned firsthand that not every recipe is a winner, but I still go back to the pages stained with over fifteen years of use. I've wound up adjusting and revising my favorites, but I would still recommend this as a good reference, especially the section on substitutions for ingredients (if the reader is vegetarian or vegan - nothing really replaces butter and chocolate).

Great bread baking info/The anti-capitalism left me cold.,
By fiesta@iglou.com (Bedford, Ky) - See all my reviews
This review is from: Uprisings: The Whole Grain Bakers Book (Paperback)
This book has the best bread recipies using all natural ingredients for good health. Lots of useful substitutes for people who have special dietary needs. The Best. I did find the constant put down of our capitalistic system of free interprise uncalled for in a cook book. It seemed that the authors primary goal was to sell socialism.

I ordered the book because I like to bake, and thought it would be informative. UPRISINGS is informative, but it's one of those books that beats an idealogical drum. I actually agree with the authors that Americans eat too much meat, but I don't believe that if we all became vegetarians, the extra grain would be automatically shipped to starving people in other nations. It's not that simple. Also, not matter how you use it, carob does not substitute for chocolate

Just got this book a few days ago and yet to try any recipes, but this book looks amazing! All of the recipes use whole grains, and natural sweeteners. The first 60 or so pages is full of info on baking, substitutions, ingredients, and techniques of all the different types of baking. I am very excited about the section on essene bread (or sprouted wheat bread) it gives step by steps instructions on how to do this. This is a great book to use as a reference when baking from any other resource if you have special dietary needs like no diary, or refined sugars.
All the recipes are hand written with fun drawings. Very orginal. Some of the recipes I am going to try are: crumb cake (sweetened with dates and fruit juice), Cashchews (a raw nut and dried fruit treat), blue corn muffins, bran muffins, veggie cheese stuffed bagels, pumpcorn muffins (pumpkin corn and spice muffins), nondairy frosting, pumpkin bars, buckwheat bread, sourdough, wheat sprout crackers, parsnip cake, wheat free muffins, lemon wedding cake and many many more! THis book looks very promising, I will up date my review once I have tried some of the recipes.

I'd had a copy of this book many years ago, and was goofy enough to give it away to someone that I wish I hadn't...Now, it feels so good to have another copy. The muffins are especially good. I'd recommend it to anyone who loves to bake, especially breads.
