Just so that you know what you are buying - the ingredients on the back are clearly shown to be olive oil and "truffle aroma". As another reviewer said - this is olive oil and chemicals. It's very disappointing to have paid this much for a wee little bottle (and it is wee!) of olive oil and chemicals.

You cannot go wrong with this white truffle oil, it has a good balance and none of the synthetic flavorings some other brands use. I am a Private Chef in New York City who has sampled many different brands over the years, this one definitely stands out. Even Daniel Boulud uses Urbani White Truffle oil in his kitchens, that should tell you something.
A drizzle of this stuff on a Soft Polenta with Sauteed Wild Mushrooms = Heaven. Check out my blog for the recipe. Hope this helps!

We use this, and in very small quantities it can add a nice overtone, but keep in mind this is all chemicals and olive oil. Natural truffles play no part in its manufacture, so anything more than a touch can get overtly metallic and chemical tasting.

I've had several brands of truffle oil, and think that this one is probably one of the worst. Poor quality oil, very bland, hardly any aroma at all. Won't be buying this one again...

I'm flabbergasted by the glowing reviews that "truffle oil" is receiving on Amazon! Those of you espousing a desire to drizzle this stuff on your food might be sorely disappointed to learn that the truffle flavor in those tiny $17 bottles of "truffle oil" are made in a laboratory. There's not a molecule of actual truffle in them. It's a sinful shame that's perpetuated despite being outed a few years ago in an enlightening New York Times article called "Hocus-Pocus, and a Beaker of Truffles." And if you see "truffle oil" advertised on the menu somewhere, you might ask if they're using any other artificial flavorings in their dishes...

At a local restaurant, they serve truffle butter. I loved it so much that I was curious to experiment with truffle flavors at home. I had read a lot of reviews on the butter being melted or settled by the time it arrived so decided to purchased the Urbani truffle oil to make my own. The package was delivered earlier than the expected delivery date. The bottle was much smaller than I had expected, but after reading recipes, you don't really use that much to get the flavor. I have made truffle mashed potatoes and truffle butter. As a novice chef, I am pleased with my purchase.

I bought this yesterday at the same price from a gourmet wine-country grocery store, and while it is small, the flavor and scent are rich and heavy. I'm going to use it in a vinaigrette tonight. I've seen much larger bottles of truffle infused grapeseed oil also which tasted just as good, so it wouldn't hurt to shop around if you can wait (I couldn't-- there's a truffled lobster risotto recipe I've been wanting to try for months).

Maybe this company has very poor quality control where some batches are wonderful and others are just olive oil with a whiff of truffle but our 2 bottles had no truffle flavor at all. Very disappointed. I will buy other brands next time.

Do not use this in your cooking,

I used to use white truffle oil in my cooking a lot. I had it on a dish at French Laundry and figured it was a great way to up my game and make myself a "fancy chef." That was before I figured out how to actually cook. For some background: truffle oil is not an oil made from truffles. There are no truffles in it. It is olive oil combined with 2,4-dithiapentane, which gives the oil a truffle aroma. Although 2,4-dithiapentane is not a chemical and is organic, it's still not truffle. If you see a dish in in a restaurant that uses truffle oil, it is usually because the chef is trying to jump on the "truffle craze" without resorting to the expense of using actual truffles.
That being said, I won't lambast the product completely. You can make a successful dish with it if you know what you're doing and use it sparingly (better to cook with it than to use it in the raw form as a dressing to anything). I've had several truffle oils and Urbani's is one of the worst, because of how pungent it is. The truffle smell is overpowering, and I don't believe they use a good olive oil base, because the stuff goes bad after a couple months. My advice is to stay away from all white truffle oil, but if you have to use it, try to find a better brand than this. |
