The listing didn't list any other ingredients, so I thought I was buying asafoetida. As it turns out, it is a compounded substance that lists asafoetida after rice flour and gum arabic and before turmeric and wheat flour. Not only was this a surprise because I had no idea that there were fillers, but I have celiac disease, so the stuff is actually toxic for me.

Be forewarned. This is not the pure spice but a watered down mix for the export market. I suppose I can live with that but I would have liked to have known it when I purchased it. I had never heard of this Indian spice before until a recent recipe book by Madhur Jaffrey kept demanding its use. I guess it adds a certain subtle flavoring to the dishes but my palate really isn't that discerning. I think you have to use more than the recipes demand since this is adulterated with a filler.

i have been cooking indian food for almost three years now and i always used to substitute for this unique spice that i can never get in local groceries. my recipes are much better with it however, once you get the spice you should transfer it to a glass jar with a tight fitting lid because the spice does have a powerful sulfer smell before it is cooked. adds depth and complexity to dishes. WARNING: the manufacturers add a lot of filler to this asafoetida like rice flour, gum arabic, turmeric and wheat flour.

i will likely try to find a purer source next time i purchase this spice.

Yes, this spice smells bad! Yes, you do have to keep it separated from your other spices, but, it adds so much flavor and new depth to your Indian dishes that it's so worth the initial odor. Once this spice is added to your pan, it takes on an entire new smell unlike what it is in the container. I use this in my Sambar and have even used a bit in my potatoes and bell peppers for added flavor. You only need about a half a teaspoon because it is strong. Wonderful addition to the Indian spice rack!

This is my first experience with asafoetida, so I have no basis for comparison. Based on the spice's reputation of being horrendously smelly, I was leery of even opening up the package when it arrived, and kept it down cellar until I needed to use it. When I finally did get up the courage to use it --about a week or so after receiving it-- I found it to be not offensive at all. It does smell onion-y and somewhat sulfurous, but nowhere near what I was expecting. It reminds me of what onions smell like when they start to go bad in storage, although not as strong. I purchased the spice purposely for its supposed anti-flatulent properties (I've been cooking a lot more beans lately and my spouse gets very windy, lol); however, we can't tell if it's really effective. I guess a 'magical' cure was too much to hope for! Maybe it's because this product is not the pure spice. On the other hand, it does add a definite and unique flavor to cooked foods which is similar to onions and garlic, and not at all unpleasant.* I will probably continue to use it, especially now that I know I don't need to keep it quarrantined in the basement! I will, however, store the jar inside a ziplock baggie, to avoid any chance of affecting other spices stored in the same cabinet. My research on using this spice says it should be added to the pan right after the butter/oil/fat, and stirred well, so that the flavor and aroma has a chance to mellow, before adding other ingredients. That's easy enough for me to remember, because it's exactly what I do with "aromatics", i.e. fresh onions & garlic. *[YMMV; if you're NOT a fan of garlic & onions, you might not like asafoetida!]

I was really unhappy with this purchase. This product is full of filler, so you're not getting pure Hing powder. Also, it's nearly impossible to open the cap enough to dispense the powder. I hate the packaging. Wish I'd gone with a different brand!
