First off, I'm not vegan, but I like having different and varied vegetable and grain options and I find many of those in vegetarian and vegan cookbooks. The Spinach, Lentil, and Quinoa Stew recipe in this book is fantastic! I used packaged steamed lentils and red quinoa and I non-veganed it by using chicken stock instead of the water. Since I planned to use this as a side dish, I reduced the liquid a bit by simmering the sauteed veggies in it. I chopped the spinach, covered the pot, and turned off the heat so the spinach wilted but remained bright green. The dish was beautiful and it was delicious!

The good: Easy to follow directions and most of the ingredients are easily obtainable in any regular grocery store. There are is a nice variety of recipes, from your cold salads, to soup to hot dinners and a few desserts and breakfast items.

The bad: There are no images in the Kindle version. I prefer to see images of the finished dish, one because it is just more appealing in terms of the book and two it helps someone decide to actually make the recipe.

There are no nutritional facts listed with the recipes. And while I can personally calculate the amount of calories, fat and carbs, it would be nice to be able to see these before I make grab the ingredients. For those on diets or nutritional restrictions having the nutritional values printed with the recipe helps make better choices in terms of cooking.

So far all of the dishes have been delicious and easy. You don't have to be vegan to enjoy them - they are fantastic - especially my personal favorite Roasted broccoli buckwheat salad and Warm mushroom quinoa salad.
I highly recommend this book for everyone .

That's right, I don't "need" this book to avoid animal products or to avoid gluten.
But I have vegan friends and gluten-free friends, and I like to have a dish for them when we have an event. I'm sure they have big, thick cookbooks for thier diet choices, but this is just fine for me.
I also LIKE the recipes, and wouldn't hesitate to cook them for myself.
