This beautiful Vegan Cookbook rivals any "regular" cookbook, with delicious recipes -- well illustrated and made simple by editorial comments. My husband and I enjoy preparing and eating these wonderful foods, and were excited to see nutritional analysis after each recipe to help plan balanced meals!
Other cookbooks do not contain educational comments for a healthy lifestyle from the author/cook and her doctor/chemist husband that are like 10 days at their Emerald Valley Wellness Clinic! It's hard to believe they've added this wealth of information as a priceless bonus!
(Note: Another comment said it isn't a "Vegan Cookbook" because of including honey in some recipes. I note the Hansens' editorial comments make it clear how those who prefer to avoid honey can make appropriate substitutes. "Vegetarian" would be a misleading label considering the focus of recipes and healthy lifestyle comments.)
I'm privileged to have enjoyed many recipes in this cookbook for five years -- they contributed to total turn-around of effects from the massive heart attack I suffered. As promised, now we can replace our ear-worn Lifestyle notebook with this wonderful, sturdy, handy-sized volume. I hope to hear many more miracle stories as people learn and prosper with this lovely creation!

suprisingly tasy meals, May 23, 2008

I have to write and say that I LOVE this cookbook. I have been very skeptical about cooking vegan (without the use of dairy) and have been hugely pleased with each recipe I have tried. I don't even notice that I am not using dairy products. My favorite recipe is the lemon creme pie. I love surprising everyone with the "secret" ingredient that makes this pie great. I also like that I can feed my 18 month old anything in this book and feel good about it. I used the recipe for the apple cake to make her 1st birthday cake and she really enjoys the healthy waffles and burgers. Kay did a wonderful job with making each recipe healthy AND pleasing to the tastebuds!
My only objection is that it is hard to find recipes cross referenced in this book. You have to know the EXACT name of the recipe you are looking for and it may not be found in the index under the name it is given in the recipe. For instance, the sour cream recipe is needed for the fajitas, but no page number is given to find that recipe and then when you try to look it up in the index, you don't know that it is actually called "Tofu Mayonnaise" with an increase of lemon juice to make it sour cream. There are several of these complications in this book and if Kay cross referenced this book better, it would be 5 stars for me!!!!

Felling Better Already!, February 14, 2008

Thank goodness Ms. Hansen took the time to compile and create this wonderful recipe book. The meals are as delicious as they look in the well put together and beautifully photographed effort. Having been a Vegan for over eight years I know it is sometimes difficult to come up with good quality meals and this will be in use in my kitchen for years to come.
