Good ideas for recipes,

I was drawn to Vegan Meals since it was aimed at recipes for just a few people. I am the only vegan in my house, and I found this to be very helpful. It gave me ideas on good, quick meals, as well as what to keep stocked up on in my kitchen and pantry.
The downside of this book was that I found the recipes I tried to be kind of unappetizing. And one that I tried (something with potatoes and kale) had the wrong amount of pepper in it, and I ended up ruining all of my work and had no dinner. I think that in the future, I will have to try adding my own touches to the recipes to make them better for myself. The resources in the front and back of this book are very helpful. I found a ton of simple, quick, and delicious meals and snacks to try, many of which I use almost every day. I didn't try all of the recipes, but the few I tried I didn't like. So, I guess it's up to you to venture out and try these; after all, I could just have a weird taste in food.

Vegan Meals For One Or Two: Your Own Personal Recipes is a splendidly composed collection of vegan recipes for delicious, nutritious, easy to make dishes that will adequately serve one or two people. Of particular interest for the novice vegan or vegetarian are the introductory sections on shopping for and purchasing ingredients, their proper storage, vegan meal planning, and kitchen safety. There are vegan recipes for breakfast, "One-Pot Wonders", meals to prepare and freeze for later dining, recipes for "Grab-and-Go" time constraints, desserts and snacks, as well as every day and special event cooking. From Upside-Down Pecan-Bran Muffins; Cucumber Raita; and Spur of the Moment Salad; to Almond Rice Pudding; Potato Tacos; and Pasta-Stuffed Roasted Peppers, Vegan Meals For One Or Two showcases some of the best that vegan diets can offer for both culinary taste and appetite satisfaction.

This is my favorite vegan cookbook so far! (I have several). It uses really simple ingredients, and the portion sizes are hearty. I will probably need to replace it in a few years because my current copy is getting rather beat up due to overuse.
Another reviewer wrote about the 'wrong amount of pepper' in a potato-kale recipe. I tried that recipe too, and since I really like pepper, it tasted great! But to each their own... The Vegetarian Resource Group is also a great resource for vegetarian/vegan cookbooks and restaurant listings. I'm pleased that this cookbook came from them.

This book is simple and anything i have made so far has been tasty. I esp liked the Smoky Black Beans. The "Better Than Beef Stew" was also a hit.
The recipes can use some additional seasoning, but the book even says that the recipes are mild so people can adjust easily to personal taste. This is great of veg couples (like my situation) but also, young vegans that live at home with parents that are not the supportive. I hear it a lot "I want to be vegan but my mom doesn't want to cook extra meals/buy food ect" These are simple and easy. Teen vegans should have a problem cooking their own meals and the portions are prefect. Also, many of the ingredients (aside from some fake meats here and there) are common easy to find, already in the kitchen and not expensive.

Vegan Meals for One or Two from the Vegetarian Resource Group is a good choice if you want healthy, delicious, non-fast food vegan meals, but are cooking for just yourself and maybe one other person. It contains a large, two chapter introduction to vegan meal planning, shopping and cooking which makes it ideal for someone without a lot of experience in the kitchen. Most recipes serve no more than two, none of the instructions are complicated, and virtually none of them call for brand name ingredients. As an added bonus the calories, fat, fiber, calcium, iron, and sodium for each dish are listed at the end of every recipe.
There is a large, creative morning meal section with choices like Breakfast Potato Burritos, made simple with frozen hash browns; and Breakfast Stacks, which is described as peanut butter and jelly meets cornflakes in a pan. Chapters emphasizing vegan convenience foods are "One-Pot Wonders", "Grab-and-Go", and "Freeze or Refrigerate Now, Eat Later". The section with desserts also includes snacks like baked veggie chips, home-made power bars, and a dip made with pineapple and baked beans. This is just one of the many cookbooks available from the Vegetarian Resource Group. Some of the other choices are Vegan in Volume, with recipes serving 25 or more, Vegan Microwave Cookbook and The Lowfat Jewish Vegetarian Cookbook.

Switching to a Vegan lifestyle became easier upon purchasing this book. Not too fancy, mostly things that I already have in the cupboard. I am really very happy with this easy to read book. L.Dowen

It is a reasonably priced book. I have perused through the book and the recipes are very basic.
I have not been drawn to use recipes out of the book. Just don't sound appetizing.

This is the third book in a row that's been a bummer, so I am going on a vegan book stoppage! I found the recipes in this to be so unappetizing, so many reliant on tofu type ingredients instead of beans for a protein source. Yuck. Honestly I didn't find a single recipe I wanted to use so I am giving this book to the local thrift store, along with at least two others, if not more, In my new found passion for being a vegetarian, I have wanted to build up a great vegan library. Looks like I was lucky with my first ones, not so any more. I am very disappointed. And bothered I've spent money on these books.
