With its simple ingredients and concise writing, this cookbook has helped me get amazingly aromatic and flavorable results from ordinary vegetables. The proportions are spot-on, giving me confidence that I never have to second-guess Budwig's judgement. Although I have made at least a third of the recipes in this book, it is one that I still constantly turn to for new ideas on how to get impressive results when entertaining.

I bought this book in London in 1994 and am delighted that it will be soon available so that I can give it as a gift to friends in the US.

Robert Budwig introduced my family to the cuisine of France, Italy, Morocco, India, Thailand, Latin America and California through his trips to the local vegetable market.

Each country's section contains the quintessential ingredient for their menu such as Moroccan lemons, Thai Curry Pastes, Garam Masala, etc.

While the recipes are not Betty Crocker's "Dinner for 40 in 10 minutes", they are the tastiest dishes that you will ever eat at home.

Most recipes can be prepared with or without meat.

It is a terrific gift!

I have used this book for several years ever since friends gave it to me as a gift. This is a valuable resource to accompany the bounty of California's farmer's markets. I bought this copy of the book as a gift for a a friend, who was also enjoying the fruits--and vegetables--of our local farmers. A great array of recipes with various ethnic takes on fresh and seasonal produce. It's like an international trip with recipes. And especially useful for anyone wanting to eat more vegetables and less meat in their diet. Easy recipes and charming illustrations.
