My husband has a profound abhorrence for "healthy" food! When my kids started using this cookbook, I think he was shocked himself that he actually liked the food. The recipes are easy and quick. My teenage daughter loves using this book.

Best Vegetarian Cookbook I have ever used!,

This book is just wonderful. First of all, it is beautifully photographed and inspires you to cook each and every recipe. Secondly, the recipes are simple but have slightly different twists from typical American vegetarian dishes. The recipes are easy to prepare and cook - indicating real time prep and cooking time for each one. Best of all, they are delicious! I am tired of vegetarian or vegan cookbooks that require a long list of ingredients - half of which are not standard items in my pantry - and most of which tend toward an Asian flavor (something I enjoy but do not want in every single recipe). I have cooked a number of recipes from this cookbook for my non-vegetarian friends and they have asked for recipes, raving about the food. I love this book and have recommended it to a number of my friends. I cannot wait to order her other books.

I have a lot of vegetarian cookbooks on the shelf. I wouldn't have guessed this would be such a well used favorite (mostly because it's one of a series by the publisher instead of a cookbook from a restaurant or chef I had heard of) but every recipe I make from this cookbook turns out well, with balanced flavors and terrific results. I know when I reach for it that I can try something new without wondering whether or not it will be tasty. They really kitchen tested these recipes!! Instructions are very clear with pictures throughout.

Easy & Excellent Recipes,

I have several vegetarian cookbooks, but I use this one almost exclusively. All the recipes are easy, and there's few exotic ingredients. The great layout and photos take you step by step for every recipe. Any meat eater will enjoy these recipes (my husband does!). This is a lacto-ovo vegetarian cookbook, but you can use substitutes where needed.

I just received this book as a gift and absolutely love the recipes. Jenny Stacey does a good job breaking down the steps of preparation and has helpful tips. The combination of ingredients used makes the recipes interesting and fun to prepare. So far, every dish I have prepared from this book has been praised by family and friends.

I love this book for the very simple reason that every single recipe I've tried (and I've tried most of them by now) has been delicious. And beautiful. Vegetarians and carnivores alike beg for more. Many of these recipes have become regulars in our household.
I love the diversity of the recipes. I love the photos that show the steps of cooking, and the lovely images of the finished product. My meals look surprisingly like the photos. I like the "cooks tips," and the flexibility to substitute some veggies for others when seasonally available. I'm not new to veggie cooking. Folks who are just starting out may wish seek other resources too.("Vegetarian Cooking For Dummies" etc.) There are many great references out there. But if you want delicious, simple, crowd pleasing vegetarian recipes, snatch up this cookbook. I picked this book up on a whim, and I shall always be glad I did. It's the most often used cookbook in my house.

I love this book. I own many vegetarian books but there isnt a single one that Ive so thoroughly covered. Dont get me wrong there are a couple of recipes I dont love but for the most part the book is fantastic and has food that covers a wide range of tastes. All I could ask from it would be the calorie count of the food but its forgiving with how good the food tastes!

would not recommend,

I turned to the recipe for Risotto Verde, and the directions called for "4 tbs chopped mixed herbs". I bought this cookbook to learn about which spices/herbs/seasonings to use, not to experiment on myself. Again, Lentil & Rice Casserole calls for "1 3/4 ounces of green beans". what dose that mean? i don't own a cooking scale! the pictures are pretty, but it would seem to end there.
