Customarily the preferred knife for most kitchen tasks, our 6-inch/ 16cm Chef’s Knife bears a classic design for general use.ViCeraTM ceramic knives are made of an advanced, high-tech ceramic called zirconium oxide (also known as zirconia). Zirconium oxide is extremely hard and wear resistant, rating 8-1/2 on the Mohs scale – surpassing stainless steel (5-6 Mohs) and approaching the hardness of diamond (10 Mohs). The Mohs scale, developed by mineralogist Friedrich Mohs, is the universally accepted standard for measuring the hardness of minerals. The primary difference between ViCeraTM and other ceramic knife manufacturers is the size of the zirconium oxide particles in the finished blade. Using advanced technology, the zirconium oxide particles in ViCeraTM blades are broken down to one fifth of their original size. They are then pressed using 500 tons of pressure (compared to the 200 tons used by other ceramic producers). The end result is a stronger, denser blade with substantially longer edge retention. Because ViCeraTM knives are forged to such exacting standards, there is no need to polish the entire blade before final presentation, which other manufacturers must do. When applied to the entire blade, polishing can create tiny, almost invisible cracks, which can compromise quality and make the knife more susceptible to breakage. ViCeraTM blades are only polished on the cutting edge revealing a brilliant, dense, white blade that naturally resists staining. When you pick up a ViCeraTM ceramic knife, you are holding a perfect balance of new technology and old-world craftsmanship. a ceramic knife that does not break easily. Bought this after thee Kyocera broke. This is thicker, and so far has been sturdy and sharp as can be. If it snaps as easily as the Kyocera did, ever, I will b back.

This is the sharpest knife that I have ever owned. So saying that, just be careful with it! And I bought mine through John Kohler's site instead of here. Not looking here first cost me about $20.00 more but with this purchase every penny was worth it!!!

Normally I would not spend this much on a knife. However, I spend a lot of time cutting things up for the juicer and blender and struggled with a blade that was constantly getting dull. This knife is a joy to use. For basic cutting it's very easy and fast to wield. It can do things like take off the top layer of an orange rind quite well. It's also extremely efficient at making deep slices into your fingertips! If you're used to using mostly dull kitchen knives to avoid exactly that, remember to use this blade with your full attention! However, I'd say it's well worth exercising the caution. I look forward to preparing fruits and vegetables now. It also works nicely slicing up raw fish.

How the knife compares to other ceramic knives I'm not sure. I had been using a chef knife and already knew that was the size/style I wanted. John Koehler of growingyourgreens on YouTube recommended this particular brand, which was good enough for me.
