Great as a gift, especially for someone who loves fruit, this set of three paring knives will prove very useful. Sharply pointed, the two 3-1/4-inch paring knives in the set, one with a serrated edge and one straight, perform a multitude of peeling and cutting tasks, and quickly remove apple blemishes or potato eyes. Also included is a 2-1/4-inch bird's beak parer, that uniquely curved little knife that is especially adept at peeling kiwi, peaches, and other rounded fruits. All in all, the three knives in the set (model 89765) are lightweight, very sharp, and versatile.

Stamped rather than forged, each knife blade in this reasonably priced Victorinox line is made from a single piece of high-carbon, no-stain steel and ground to a razor-sharp edge that can be re-sharpened repeatedly. The molded polypropylene handles provide a sure grip, have no grooves or rivets to harbor bacteria, and are dishwasher-safe. Started in 1884 in Switzerland, Victorinox is perhaps best known as the manufacturer of the Original Swiss Army Knife. Today Victorinox by R.H. Forschner makes everyday cutlery for the home as well as professional forged cutlery and multi-purpose tools. In 1884 Master Cutler Karl Elsner started his cutlery factory in Ibach, Switzerland and in 1897 he crafted the Victorinox Original Swiss Army Knife. Since that time the Elsner family has continued to craft tools of percision, durability and quality. Victorinox is one of the largest producers of cutlery in the world. Victorinox cutlery has been distributed in the United States since 1884 to culinary professionals under the brand name R.H. Forschner. Each blade is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished.

(9/11 Update): I find myself using the 'bird beak' parer almost daily. It is beginning to dull a bit. I know these knives were not designed to last a lifetime, but I would have paid a few cents more to have them shipped in cardboard blade protectors.

(Original): I purchased these primarily because of the great reviews in 'Chef's Illustrated'. These are exceptionally sharp (and thin). I do not have a clue as to how long the sharp blades will last. However, I can assure the reader that these do not come close to having the 'heft' of Wusthof Classic,or Henckels Four Star. Having said that, it is ridiculous, based on the price, to try to compare them.

'Cooks Illustrated' gave a very nice review of these knives and there is no reason for me to debate that review. I am rating them 4-Stars simply because they are not in the class of Wusthof Classic, or Henckels Four Star.

These little knives are great. I was desparate for a sharp knife, so I took a chance. I would not give them up for twice the price.

These knives are EXTREMELY sharp. I have actually cut myself several times unknowingly and not notice until I wash my hands or get something in the cut. So use extreme caution when using and washing these knives.

They seem to be well constructed and don't have oversized or uncomfortable handle. The 3-1/4-inch serrated paring knife is great for cutting most anything. The 3-1/4-inch straight parer is perfect for peeling and cutting apples, carrots, celery, and any other fruits and veggies. But 2-1/4-inch bird's beak parer is probably the best for peeling and segmenting broccoli and cauliflower.

All in all these knives are well worth the price ($10) and I look forward to purchasing more Victorinox knives.
