Review by a home cook with size 11 hands: Sharp out of the package, which is rare in my experience. The edge was not clean but a couple passes over the steel and it was ready. The edge extends to the heel, which is something I really like. No bolster to get in the way of a very comfortable grip. Balance point right at the point the handle ends so it's neutral. Broad blade keeps my knuckles off the deck and holds a a good scoop of choppings. Slicing through a acorn squash was almost effortless. Chopped shallots and thin onion slices. Tomatoes, both thin sliced and diced. Thin-sliced a large green cabbage for slaw. Split some bagels. Cut a rack of tender port-ribs with minimal tearing--nice!. The smooth tapered design aided with the squash but caused sticking with the cabbage...as expected with a full tapered edge. No wood or aluminum making it dishwasher safe, in case I want to.

Looking for decent knives to replace an inefficient knife set that was given to me years ago, I started with this Forschner Victorinox Fibrox 8" Chef's knife (model # 40520) based on the high recommendations from Cook's Illustrated. At first I was turned off by it's appearance, preferring the look of wooden, riveted handles, but I decided that function was more important than looks and gave it a try.

I am blown away! I have owned this knife for over a year now and it still seems as sharp as the day I bought it, yet I have never done anything more than use a conditioning (sharpening) steel on it every few uses. It's light, well-balanced, & has a comfortable, safe handle at a reasonable price... an exceptional value!

I then bought a Forschner Victorinox Fibrox Paring knife, a 10" Slicer, the Conditioning Steel, and just to fill in my old knife block, a 7" Serrated Edge Chef's knife and a Boning knife (same brand/model). I love each and every one of these tools and highly recommend this brand, especially the 8" Chef's knife!

It is extremely satisfying to find such incredible tools at such a reasonable price; restoring hope that there are still people/corporations in the world that understand it is possible to be successful by giving consumers a superior product at reasonable price.

p.s. This exact knife (model # 40520) can be confusing to find with Amazon's search engine (2009). Several other model numbers also appear in the search results... some listing the model number in the description, while others can be found only by enlarging the picture. Also, I have had good experiences with Allsparestools.com, including their return policy, and their current pricing of this knife (2009) is considerably cheaper than other websites.

Update (2014): Still have them; still use them; still love them!

I bought this as a gift for my dad. He had one that got lost somehow and he really missed it. He loves the grip and the angle of the handle and blade for cutting. It came sharp and it takes an edge nicely although doesn't hold an edge superbly, which is typical of steel used in most kitchen knives.

My only complaint is that they don't tell you what kind of steel they use. This is something I like to understand for care and maintenance (i.e. cleaning and sharpening). I've found that when a cutlery company doesn't tell you the steel, it can be because they use different steels depending on what they can get the cheapest.

I've never owned a chef's knife before. I wasn't sure which size would be best. Nearly purchased the 10 inch knife but decided on the 8 inch one. When I opened the package I initially thought they made a mistake and sent me the wrong one, because it's huge. That's when I realized the knife is measured by the size of the blade, not end to end. So I'm happy I purchased the 8 inch size because the 10 inch knife would have been much too big. After opening, I used it almost immediately. It's well made and slices beautifully. The handle is comfortable. It's a great knife, the price is very good too.

I am no chef but I do like to cook at home. There is nothing more frustrating than working with a dull knife. These are by far the sharpest knifes I have ever used. They easily cut through bone and cut fat off meat with ease. I also purchased the paring knife and steak knifes. I am pleased with all off them and would highly recommend them.

A great knife for the money. Grip is comfortable is non-slip when wet and cleans up well. Lighter weight blade than some of the other 8" chef's knives I own so it works well for most prep work except splitting fowl or acorn squash.

Handle with care - this sucker is SHARP! Only had it a short time so I can't address durability (America's Test Kitchen rates it highly) but as far as quality construction and a sharp edge - this would be hard to beat.
