Product Description

In 1884 Master Cutler Karl Elsner started his cutlery factory in Ibach, Switzerland and in 1897 he crafted the Victorinox Original Swiss Army Knife. Since that time the Elsner family has continued to craft tools of percision, durability and quality. Victorinox is one of the largest producers of cutlery in the world. Victorinox cutlery has been distributed in the United States since 1884 to culinary professionals under the brand name R.H. Forschner. Each blade is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished. Straight grain oak block offers slanted design for easy access and 9 slots. Included are: 4-inch Parer, 6-inch Boning, 8-inch Bread, 8-inch Chef's, 10-inch Slicer, 10-inch Sharpening steel and Kitchen Shears.

We put these knives on our wedding registry after reading Cooks Illustrated's kitchen knife review. They most highly recommended these and a set of high-end Wustoff knives. We chose these because they're a much better value (when these go on sale, you can pick up the whole Victorinox set for about the same price as one good Wustoff knife).

We've been very happy with our choice (and our friends who bought them for us--gotta love registries!). The blades are very sharp, the knives are very well-balanced and comfortable in the hand, and everything is very easy to clean. We've had our set for a few months now and the blades are still as sharp as the day we got 'em. And the physical design of the knives is very functional.

They aren't quite as sharp as the heavier forged metal blades of some higher end knives like the fancier Wustoffs. These are stamped from a sheet of metal rather than being individually forged. But they're still very good, and are a much better value than their forged competitors.

One note: We were a bit confused about the difference between the Forschner and Victorinox versions of this knife set. But it turns out that they're the exact same knives, just distributed under two different labels. Forschner is the brand name they've used for years to sell to professional chefs. They only recently started selling under the Victorinox name in an attempt to reach home gourmets, under the theory that people already associate the Victorinox name with quality. But we have the Victorinox version, and they're exactly the same as my friend's Forschners. So you can buy either (whichever is cheaper).

I, too, put these knives on our wedding registry after Cooks Illustrated liked them so much. The handles are light-weight and easy to grip; but the knife blade itself is sturdy, strong and really, really sharp. I never knew how easy chopping, slicing and dicing could be. Buy these knives - you won't be disappointed.

These knives are more than a bargain. These are high quality knives, durable and sharp. I am very pleased with their performance thus far. The block even comes with 2 empty slots which was perfect for me because it gives me a place to store specialty knives that I have purchased separately.
