5.0 out of 5 stars One Fantastic Knife!, February 4, 2004
This review is from: Victorinox 8-Inch Chef's Knife (Kitchen)
This is really a great knife at a super price! I was very skeptical about purchasing a stamped knife rather than a forged one but I took a leap of faith and purchased it based on a top rating by Cook's Illustrated. It quickly became my knife of choice. The blade remains incredibly sharp for far longer than any similiar knife. But the real beauty of this knife is in the handle feel and blade balance. Unlike any other chef knife I have ever used, I can work all day with this knife with little hand fatigue or blisters. The handle remains firm in my hand even when wet or oily. I strongly recommend this knife - you won't be sorry. It is a real winner!

5.0 out of 5 stars It just works!, November 10, 2004

Like the other reviewers I bought this after reading about it in Cooks Illustrated. I was looking to replace an old chef's knife I'd had for many years and figured at the price of the Forschner, the worst thing that could happen is that I'd have replace it quickly, but at minimal loss.

Turns out the Cooks Illustrated review was correct. This knife as become a quick favorite. It takes and keeps and edge, is well balanced, and is comfortable to use.. Although it's supposed to be dishwasher safe, I always hand clean this blade.

This knife, along with those made by Tremontina, show that really good tools don't have to be expensive. It if makes you feel good to buy high-priced cutlery, have at it. But, if having a good chef's knife that just works, buy the Forschner.

4.0 out of 5 stars Great Knife, July 29, 2005

The Knife has performed excellently in all situations. I have been using it frequently for 2 months and it has still kept its razor sharp edge. The only possible complaint that I could level against it is because it is stamped rather than forged it doesn't weigh much. The light weight of the knife doesn't effect its performance but gives it a strange feel. The feel of the knife is very comfortable with an ergonomic handle (Fibrox) which is very easy to clean. I would definitely suggest the purchase of this fine blade.

5.0 out of 5 stars Awesome all-purpose knife!!, September 17, 2005

I bought this knife after taking a cooking class in which my instructor raved about these knives... later I also saw a top review in Cook's Illustrated magazine. Honestly, I didn't know what a sharp knife was really like until I bought mine. I have a couple of the paring knives as well as this one and I can't say enough of great things about these knives!

5.0 out of 5 stars A big fan, September 13, 2005
This review is from: Victorinox 8-Inch Chef's Knife (Kitchen)
I am now a big fan of Victorinox/Forshner knives. I've used Wusthof knives and decided to take a chance on Victorinox because it did well in reviews compared to more expensive brands. I have the 6", 8" and paring Victorinox knives and they are excellent - sharp, easy to grip because of their Fibrox (rubber-plastic-like?) handles, and light so my hands don't tire as quickly. Feels very natural and cuts well, even though it is lighter than Wusthof. A few great purchases.

5.0 out of 5 stars Fantastic knife - don't put it in the dishwasher, December 17, 2004

This review is from: Victorinox 8-Inch Chef's Knife (Kitchen)
I tried the Henckels chef knives and didn't like the thick blade, which caused it to hang up halfway through an onion for example. Before this knife I used the 10" rosewood handle version but I like the balance of the 8" and the non-slip properties of the Fibrox handle. To the person who is concerned about the handle discoloring, I would say, regardless of what any manufacturer says, it is not a good idea to put any high quality knife in the dishwasher. Items can move around and the edge can get nicked. There is also the danger of getting cut when retrieving the knife from the dishwasher. I always just hand wash and dry it after I'm done using it and put it back in the block.

5.0 out of 5 stars A great blade, July 14, 2004

Like the other reviewer of this knife, I read the review in Cook's Illustrated and was curious. My friends all have the fancy $80 German blades...could this one be as good? I've owned mine for a year now and it's great. If you look in any professional kitchen, you'll see knives similar to this one, if not this exact brand. A workhorse of a knife, and a darned good deal.

5.0 out of 5 stars fantastic, January 31, 2005

I bought after reading the good reviews, and it IS A GREAT KNIFE.

Very sharp. Can't feel a thing when cutting to-fu. It also makes tougher cutting jobs like cutting meat much easier. My gf just loves it and now she does most of the cutting job :)

The knife comes with a pretty good plastic container. My gf washes the knife every time, dries it with paper towel, and stores it back in the container.

I also love the fact it's from the swiss army knife brand.

4.0 out of 5 stars very good knife, October 25, 2004
This review is from: Victorinox 8-Inch Chef's Knife (Kitchen)
I purchased this knife after reading the review by Cook's Illustrated. It has an excellent blade and great balance. The only problem I have had is with the handle. These knives are marketed as "dishwasher safe" but the handle has begun to discolor after only 3-4 washings.

I have only been cooking for a little over a year since we got our own place and all I've been using is a set of knives I bought when we first moved. I bought this one and man was I surprised on first use.

The knife is so light you'll wonder if you bought something that will be sitting in the kitchen drawer for a long time. Cutting through carrots and celery without the veggie cracking was the ultimate test for me LOL. I've always wondered why my carrots and celery crack when I'm cutting them into pieces. The chefs on TV make it look so easy. I guess the knife really makes a difference, it's so sharp and thin it just goes through the veggies like butter.

Try it for yourself, you'll be glad you did.
