Designed to be used in a smooth rocking motion, this large 10-inch chef's knife from Victorinox is ideal for a wide range of chopping, dicing, and mincing tasks. The blade measures 2-1/8 inches in width near the handle, which facilitates scooping up chopped items to place in a pan or bowl. Stamped rather than forged to keep the price reasonable, the high-carbon, stainless-steel blade is ground to a razor-sharp edge that can be re-sharpened repeatedly. The molded Fibrox handle provides a sure grip, has no grooves or rivets to harbor bacteria, and is dishwasher-safe. All in all, this is a lightweight and very utilitarian knife.

Started in 1884 in Switzerland, Victorinox is perhaps best known as the manufacturer of the Original Swiss Army Knife. Today Victorinox by R.H. Forschner makes everyday cutlery for the home as well as professional forged cutlery and multi-purpose tools. In 1884 Master Cutler Karl Elsner started his cutlery factory in Ibach, Switzerland and in 1897 he crafted the Victorinox Original Swiss Army Knife. Since that time the Elsner family has continued to craft tools of percision, durability and quality. Victorinox is one of the largest producers of cutlery in the world. Victorinox cutlery has been distributed in the United States since 1884 to culinary professionals under the brand name R.H. Forschner. Each blade is stamped from a single sheet of metal. The blade is then hardened, tempered, ground, polished, etched and finished.

This knife was surprisingly sharp right out of the package. This knife is huge and quite long (my first impression was that it was a scary knife because it is so large and sharp). I specifically purchased this long 10" knife for cutting large items such as squash and watermelon. (I also have Wusthof Classic 8" chef's and 7" santoku knives that did not handle those jobs to my satisfaction.) I have not yet used it for those jobs, but I have used it for others. Since I am not expecting that this product will be my workhorse knife, the low price was attractive (also I got it on sale for approx. half its normal price - an incredible value).

This knife sliced through a very large, hard turnip and a bunch of large dense carrots like butter! I know the Wusthofs would have bogged down. It cuts through lettuce like tissue paper. This knife is solid, rigid and has a quite thick blade. I would have expected it to be more flimsy based on the price, but it is high quality made in Switzerland (also surprising that it is not made in China for its low price). Although it is a stamped (not forged) knife, the stainless steel and heft seem of equal quality to my Wusthof (although I have not compared in fine detail). I was surprised that a stamped knife would be so nice. The handle is not so great ergonomically, but it does the job.

I have not yet tried sharpening the knife and have not used it long enough to judge how it holds its edge.

Cook's Illustrated / America's Test Kitchen has recommended the 8" version of this knife as its top pick.

This knife is well balanced and made with high quality steel. I think the real test of a knife is how well it resharpens because I prepare two or three meals a day. Using the spyderco Tri Angle Sharpmaker System I am able to maintain a sharp blade easily with a dozen or so strokes on each side. The edge retention is ok. This is a big knife that excels at cutting large vegetables.

I bought this knife for my now husband who was 'just a guy I was dating' at the time of purchase. I know what you're thinking. "What kind of girl gives a 10 inch knife to a guy she is dating?"

But what can I say...he loves to cook and I figured the odds of him making me a phenomenal steak au poivre were higher than his hacking my body into pieces. And I was right. Plus I read great reviews about this knife.

5 years, countless amazing meals and one baby later, he still raves about it. He's barely had to sharpen it and it has far surpassed the cutting ability of our Wusthof knife that was part of a set and a wedding gift from Aunt Sylvia and Uncle Ray - whom I pray never read this review. ;)
