5.0 out of 5 stars Sharp! and great value
This knife was surprisingly sharp right out of the package. This knife is huge and quite long (my first impression was that it was a scary knife because it is so large and sharp). I specifically purchased this long 10" knife for cutting large items such as squash and watermelon. (I also have Wusthof Classic 8" chef's and 7" santoku knives that did not handle those jobs...

3.0 out of 5 stars Victorinox 10 inch Chef's Knife
This knife is well balanced and made with high quality steel. I think the real test of a knife is how well it resharpens because I prepare two or three meals a day. Using the spyderco Tri Angle Sharpmaker System I am able to maintain a sharp blade easily with a dozen or so strokes on each side. The edge retention is ok. This is a big knife that excels at cutting large...

This knife was surprisingly sharp right out of the package. This knife is huge and quite long (my first impression was that it was a scary knife because it is so large and sharp). I specifically purchased this long 10" knife for cutting large items such as squash and watermelon. (I also have Wusthof Classic 8" chef's and 7" santoku knives that did not handle those jobs to my satisfaction.) I have not yet used it for those jobs, but I have used it for others. Since I am not expecting that this product will be my workhorse knife, the low price was attractive (also I got it on sale for approx. half its normal price - an incredible value).

This knife sliced through a very large, hard turnip and a bunch of large dense carrots like butter! I know the Wusthofs would have bogged down. It cuts through lettuce like tissue paper. This knife is solid, rigid and has a quite thick blade. I would have expected it to be more flimsy based on the price, but it is high quality made in Switzerland (also surprising that it is not made in China for its low price). Although it is a stamped (not forged) knife, the stainless steel and heft seem of equal quality to my Wusthof (although I have not compared in fine detail). I was surprised that a stamped knife would be so nice. The handle is not so great ergonomically, but it does the job.

I have not yet tried sharpening the knife and have not used it long enough to judge how it holds its edge.

Cook's Illustrated / America's Test Kitchen has recommended the 8" version of this knife as its top pick.

5.0 out of 5 stars Great knife!, March 29, 2011

I bought this knife for my now husband who was 'just a guy I was dating' at the time of purchase. I know what you're thinking. "What kind of girl gives a 10 inch knife to a guy she is dating?"

But what can I say...he loves to cook and I figured the odds of him making me a phenomenal steak au poivre were higher than his hacking my body into pieces. And I was right. Plus I read great reviews about this knife.

5 years, countless amazing meals and one baby later, he still raves about it. He's barely had to sharpen it and it has far surpassed the cutting ability of our Wusthof knife that was part of a set and a wedding gift from Aunt Sylvia and Uncle Ray - whom I pray never read this review. ;)

comfortable and sharp. Seems to hold up pretty well to daily usage without too much sharpening or steeling

Ordered this after reading favorably about it on Apartment Therapy and the other reviews here. Used it for the first time last night and it's great! Lightweight and sharp, it diced an onion, chopped some herbs, and cut up some chicken. Can't believe I went so long without it. Will probably order a few more in this line later on.

I have owned many different high end knives over the years and this inexpensive knife wins the prize for sharpness and ease of handling. It is a pleasure to use.

I highly recommend it to anyone who wants to use excellent kitchen tools plus the price was sooo right!! Don't hesitate to buy it. You'll be happily surprised.

After hearing the glowing reviews from the testers at ATK, I decided to try out the Forschner Fibrox chef's knife. It's a *great* knife. Lightweight, no-slip handle, and very sharp right out of the box. Best of all, it's very easy to re-steel to maintain the fine edge. I am more accustomed to an 8-inch blade, but this one is so light and maneuverable that I haven't had any difficulty. It's making me rethink my dedication to my set of heavy German knives. It's well worth the money.
