I now divide all events in my life as BCK and ACK (Before Channel Knife / After Channel Knife). Before the Victorinox channel knife arrived, I used a paring knife to cut lemon twists for my Manhattans, resulting in wide, jagged, ugly strips of rind that made my Manhattans look positively third world. I was ashamed. The circumstance created no small amount of self-loathing. Now that I own the Victorinox Channel Knife (or "Victor," as I affectionately refer to it) my cocktails have lemon twists that I can be proud of. Thank you, Victorinox. Thank you.

It makes beautiful twists. Great. But I am a self-confessed cocktail snob and my deeply held conviction is that a twist is part of the cocktail and not just a accessory to make it look pretty. This knife cuts way too deep, so that half the twist is the bitter, white rind, and not the zest, which is what you really want. Snobby I know, but the twist really and truly does affect the taste of a cocktail. You should literally TWIST the zest over the cocktail before you drop it in and if you pay attention, you will see this fine mist of orange, lemon or lime oil spray off it. That will change the taste of a drink. Drop a hunk of rind in, and it will skew the taste in a way that may look nice but doesn't taste so good.

We acquired this Victorinox Channel Knife to help us improve the quality of our lemon twists for our martinis, and it does the job perfectly -- much better than using a regular knife. The twists are perfect, look great, and the lemon actually goes into the martini (where it should be) and not all over your hand. Highly recommend.

I normally use the cheap combination zester/channel knives to make lemon strips to garnish my martinis and other silly cocktails. I recently tried to make a strip from a Meyer lemon for the first time, and had a hard time creating a long strip, as the skin is fairly thin. My cheap zester failed me.

I thought I would try this Victorinox. It works really well on thinner-skinned citrus. Also, guiding the knife is easier than with my old cheap zesters. Just the best channel knife in my opinion.

Recommended for you Martini lovers out there!

I prefer a lemon peel twist in my martinis, and until I learned about this handy kitchen tool it was no easy matter to fashion a nice lemon peel twist using just a paring knife. I became familiar with this tool when I watched a bartender make a twist for a martini he was making for me. Now my wife uses it whenever she needs a nicely-shaped and easy to make lemon peel.
