The R H Forschner by Victorinox Paring Knife features high carbon, stainless steel blade, hand finished at Victorinox in Switzerland by skilled craftsmen. A special tempering process is used to produce an edge that can be resharpened over and over again, so the knife can keep its original sharpness throughout the entire life of the blade. Victorinox handles are ergonomically designed to minimize wrist tension. They provide a natural fit. A good heft and comfortable, positive grip are indications of a well-made knife. A sure-grip handle with a finger guard is valuable feature since the handle inevitably gets greasy, wet, or both. Although cutlery steel is naturally sanitary, materials and construction details of the handle minimize crevices what would offer hospitality to bacteria.

This is the best paring knife I've owned. It is excellent for paring vegetables.

I've owned high-end knives such as Henkels and Wustoff, neither were as impressive.

Simply the best paring knife I've found at any price. Cook's Illustrated rates it the highest.

I dithered for a while before ordering this ("after all, I already have 2 paring knives, a 5" utility knife, a 6" utility knife" yadda yadda) but I came across a book about garnishes and wanted to try a few things for which this type of knife was recommended as the best tool. And for the price, how could I go wrong ... right?

Surprisingly I have used this for more things than I expected to. I cook for one, most of the time, which means my cutting jobs are often small in quantity and/or size of what's being cut. I haven't yet figured out whether there's a correct technique to hone or sharpen this shape of knife, as compared to the typical straight blade, but at this price it's reasonable to replace it when it eventually gets to the point of being not sharp enough to perform adequately.

I bought it to make turned steamed potatoes but didn't want to spend too much money. Much to my surprise (dubious fine motor skills, which is why I have every machine and gadget in my kitchen), I was able to make very pretty turned potatoes and they steamed beautifully. It's also a great paring knife, much superior to my other paring knives with the straight blade.

...and it feels so right. Look...you want a paring knife for fruit and hoowhatnot? You likey the bird's beak feature? You want to avoid paying tens of dollars for a name brand made from exotic steel forged by the fires of Mordor under the eye of Sauron? You want me to get to the review? First, allow me to apologize for the Bryan Adams reference. While that song is a quality number culled from the album of the same name that greased the skid for Reckless, a powerhouse album full of classic 80's hooks and riffs, I am cognizant of the fact that he is also responsible for Waking Up the Neighbours (the start of his downward spiral) and a string of sappy, movie-soundtrack sell-out "I want to get a lot of money without really trying" songs that flooded brick-and-mortar stores and middle school dances everywhere. In retrospect, while Cuts Like A Knife was a quality album, the song Straight From The Heart was an eerie indicator of what was to come in his career: over-sung sappiness delivered by pushing his raspy voice. The album cover was also Nostradamus-like in hindsight: Adams in a bent-over pose as if he is subjecting the rest of us to something unpleasant smelling (future albums). Anyhoo...the knife is good. Accept the fact that the blade is 2.5 inches long and the handle is plastic and you'll be fine. Don't complain the knife is too short...they tell you its length! It's not like they send you a random size. Also, consider the price. You are getting a quality knife for peeling fruit at a low price. We use it mainly on apples and pears and it's fine. It stays sharp and we hand-wash it. There is no way you are too busy to hand-wash a knife this small. The bird's beak feature is nice. It allows for more control while peeling and gives you a chance to sound like a DB by identifying it as a "bird's beak" around friends who comment on the "curved" knife. In summation, Bryan Adams had a great two-album run and this knife is a great buy.

Victorinox Bird's Beak Knife is absolutely the first I reach for everyday in the kitchen. Balanced, sharp and best quality. All the expensive knives out there were reviewed on America's Test Kitchens and this was the very best overall and especially for the cost value.

Also called a Granny Knife by some of us, this shape can take a bit of getting used to at first. Move slowly and carefully until it becomes familiar as these are extremely sharp. By the way, these Victorinox knives are easily sharpened too. Heinz USA uses them in our local factory also because of the quality.

The handle has a textured surface for easy gripping. Wish they made an even bigger handled version so my husband could hold it better, however; for this price these knives are top quality.

This knife has a great handle. Good feel in hand and very easy to clean.
Very hard to even find a 2-1/2 Inch blade. This one cannot be beat. Grear ergonomics for fast. close-up peeling.

These knives are so inexpensive and work so well. I have a very expensive knife set, but find myself using these knives more. This little knife is perfect for taking the green ends off of strawberries or peeling fruit like apples. It is very light and very sharp.
