This is the best paring knife I've owned. It is excellent for paring vegetables.
I've owned high-end knives such as Henkels and Wustoff, neither were as impressive. Simply the best paring knife I've found at any price. Cook's Illustrated rates it the highest.

This little knife is the best for everything you want to dice. It is made for peeling but it is the knife I use for everything. Try it...you will love it.

I am a professional cook who does a lot of fruit and veg carving. I use this knife a lot, the birds beak curve helps a lot with certian things.
If you are looking for a Torne' or birds beak, this is quite good for the money.

I bought it to make turned steamed potatoes but didn't want to spend too much money. Much to my surprise (dubious fine motor skills, which is why I have every machine and gadget in my kitchen), I was able to make very pretty turned potatoes and they steamed beautifully. It's also a great paring knife, much superior to my other paring knives with the straight blade.

This knife has a great handle. Good feel in hand and very easy to clean.
Very hard to even find a 2-1/2 Inch blade. This one cannot be beat. Grear ergonomics for fast. close-up peeling.

Have used this knife for years now to make 100's of quarts of applesauce and when canning other fruits or making jams. The only knife I will use now for fruit preparation. Curved edge is great as it fits the curvature of my thumb. Cannot say enough good things about this little knife.

forschner (victorinox) is a great knife for the money. I'm a professional chef, and have been using their knives for years. Not the fanciest, but well made, long lasting and easy to sharpen. Unless you need 'ego' knives, you can't go wrong with black fibrox handled forschner knives. I would highly recommend any one of them. I love this bird's beak style for peeling veggies and other small jobs. I'm sure it will last for many years, just like my other forschners.PS Never put your kitchen knives in the dishwasher. Spread the word.

I dithered for a while before ordering this ("after all, I already have 2 paring knives, a 5" utility knife, a 6" utility knife" yadda yadda) but I came across a book about garnishes and wanted to try a few things for which this type of knife was recommended as the best tool. And for the price, how could I go wrong ... right?Surprisingly I have used this for more things than I expected to. I cook for one, most of the time, which means my cutting jobs are often small in quantity and/or size of what's being cut. I haven't yet figured out whether there's a correct technique to hone or sharpen this shape of knife, as compared to the typical straight blade, but at this price it's reasonable to replace it when it eventually gets to the point of being not sharp enough to perform adequately.

This is the best paring knife made. I have purchased cheaper versions, but this Victorinox can't be beat. I will always have a bird's beak paring knife in my block.
