Victorinox makes the famous Swiss Army Knives, so they know what they're doing. These round-tip serrated knives are sold as steak knives, but once you try them out you'll likely use them for everything, including all kitchen prep as well as table use. They're the sharpest knives in my kitchen, and my more expensive prep and steak knives get very little use.
I've given my set a lot of use but they seem to be holding their edge exceptionally well. Eventually every knife blade loses its edge and Victorinox claims these blades are made of high-carbon stainless steel and can be resharpened repeatedly. They're also dishwasher safe! Keep in mind the handles are made of plastic, so they don't look like you dropped a lot of cash on them. Nor do they have the heft and balance you find in more expensive knives. But if you simply want sharp knives that work in your kitchen or on your table, look no further. How sharp are they? From my experience you can cut a tomato as thin as you want (vegetables don't have a chance), or trim the toughest piece of meat. And as with a razor blade, you can barely touch your skin with the blade, nick yourself badly, and not even know you're injured until you see the blood. If you're accustomed to dull kitchen knives, you'll need to be especially careful with these Victorinox knives!

I ordered this same knife in black to use for steak but just had to have the red for tomatoes, cucumbers and the like. Easily spotted in my huge knife block and a fun color, it slices paper thin to any thickness you prefer with ease. Love it - love all Victorinox knives.
