5.0 out of 5 stars Fantastic paring knife - unbelievable value!
All these years I thought Old Hickory made a good knife and when I finally got tired of sharpening it and wiping the rust off, I got this Victorinox - holy cow, what a great little knife!

Holds a great edge for weeks (we use it multiple times every day) and when it needs sharpening just a couple of strokes with the disc sharpener and it's brand new again...

The quality is OK and blade is sharp but this seems too light weight and lacking in balance and blade strength for Victorinox. This is actually scary to use because the blade flexes so much under pressure that I'm not sure where it is going to end up and whether or not it will miss my fingers. Our old Ecko knives from Albertsons that wore out after a few years were so...

All these years I thought Old Hickory made a good knife and when I finally got tired of sharpening it and wiping the rust off, I got this Victorinox - holy cow, what a great little knife!

Holds a great edge for weeks (we use it multiple times every day) and when it needs sharpening just a couple of strokes with the disc sharpener and it's brand new again.

The handle is tough as nails and of course unlike the Old Hickory, it's red, so you can find it easily on the wooden cutting board ;)

Finally, the handle shape and blade flex really seem to be a great combination. Both my wife and I find it just about right for any light to medium cutting we're doing.

UPDATE: 05/06/2011, still using this knife daily and still loving it. I see it's no longer available - too bad!

This little knife is sharp and works great on slicing and dicing the smaller veggies and the price was great. I also bought one for a family member who loves it, too. I would highly recommend it.

I bought this knife with a white handle as part of replacing my old, dull utility knives. I liked it so much that I turned around and ordered this red-handled one as a gift for my daughter-in-law. At first, I didn't care for the appearance of the polypro handle, but it's comfortable, nonslip, and washes well, and I reach for this knife so often that I've come to like having the odd handle help me spot it in the block. I enjoy cooking and have tried a very wide range of knives over the years, and I honestly don't think you can beat this one for the price. It's quite lightweight, which some cooks may not prefer, but it didn't take me long to get used to that, especially since it fits well in my hand and the handle provides a good grip while I'm working. You can spend a fortune on high-end knives, and probably will if you're a professional chef, but if you're a home cook and buy this one, a paring knife, and a chef's knife (love the Victorinox chef's knife, too), you'll be well prepared to successfully tackle just about any cooking prep task you run into.

I bought several different brands of kitchen utility knives at the same time so that I could compare them. They are all quality knives and hold their sharpness well. But of the four brands: Chicago Cutlery, Cuisenart, Farberware, and this little Victorinox this is the one I go for first. Because it is light weight and fits my hand I use it the most for peeling vegetables, cutting sandwiches and eating fruit. It is just great! It is a thin, easily maneuvered blade.

The others have thicker, heavier blades which are good for dicing or cutting through something that is semi-frozen, but this is the favorite.

If you want a slightly larger, beautifully-balanced knife that will last you 10 years and you don't mind paying a bit more please look at Chicago Cutlery Metropolitan 5-1/2-Inch Utility Knife. It's vastly superior.
