What a handy knife!,

For many of my cooking tasks, I find I need a sort of "in between" knife. I love the Victorinox chef's knife, but often the task at hand doesn't require a knife that big. I love the paring knives, too, but often am chopping or slicing, so the paring knife is not quite enough. The 4-inch utility knife is my Goldilocks knife -- just right!
The first time I used it, I was chopping sweet bell peppers, something that's often frustrating; if the skins are just a little bit tough, many knives don't deal with them well. I end up having to rearrange the slices I've cut with the inside facing up to chop through them readily, a hassle and a time-waster. Not so with this knife! Its super-sharp blade sliced through cleanly and quickly with almost no effort. It was also a handy size for cleaning and cutting up the peppers to prepare them for chopping. From there, I moved on to the onions, then to the finely chopped garlic (I was making chili), and it performed equally well with all. The handle is a little small and light, but fits comfortably in my hand, and in combination with the thin blade, it makes the knife very maneuverable. At first I wasn't sure I liked the white color, but now I appreciate it because it makes the knife stand out among all the black handles in my knife block, which is just what I want, since it's become the first one I reach for almost every time. For the money, you really can't beat this knife. Get it along with the Victorinox chef's knife and you just might find that instead of a drawer full of so-so knives, you can become a 2-knife cook. I had been using a Cutco paring knife--the kind that "never needs sharpening." I decided to change to this knife, which was recommended by Lynn Rosetto Kasper (Splendid Table). What a difference! Cutting is fun, not work, now. An amazingly reasonable price too.

Another gift for my mother, per her request. Sadly we could not get this in white (handle) to match her chefs knife. This knife gets consistant great reveiws by leading cooking magazines as the best non-forged parer available in this price bracket. Seems to be a good quality knife with just enough but not too much flex in the blade.
