RH Forschner by Victorinox knives feature high carbon, stainless steel blades, hand finished at Victorinox in Switzerland by skilled craftsmen. A special tempering process is used to produce an edge that can be resharpened over and over again, so the knife can keep its original sharpness throughout the entire life of the blade. Victorinox handles are ergonomically designed to minimize wrist tension. They provide a natural fit. A good heft and comfortable, positive grip are indications of a well-made knife. A sure-grip handle with a finger guard is valuable feature since the handle inevitably gets greasy, wet, or both. I purchased 6 of these knives over 14 years ago in Europe. After years of being used every single day,(they are almost the ONLY knives I use in the kitchen), and being abused by cutting bags and boxes the 2 knives left were getting a bit dull - even tho I could still cut tomatoes with them. These are not just "steak" knives, they are "everything" knives. I was thrilled to find these wonders still available! If you buy them, I'm sure you will LOVE them! But be careful - THEY ARE SHARP!! Bought these as a gift for my girlfriend's parents. They're not the most attractive thing out there, but they work extremely well and are very sharp (as are all Victorinox knives I've used). In fact, they are SO sharp that both of the parents cut themselves using these knives within the first week. This is only because they are used to having very dull knives and thus misuse their knives, not due to any fault of the knife or its design. Highly recommended.

My mother-in-law had Victorinex knives and after using hers, we wanted our own set. The first time my husband used one, he cut himself. In spite of that it is one of the sharpest knives I've ever used.
