5.0 out of 5 stars Absolutely extraordinary!, September 29, 2009

This review is from: Victorinox 4-3/4-Inch Straight-Edge Pointed-Tip Steak Knife, Set of 6, Rosewood Handles (Kitchen)
Wow, this knife is perfected in a variety of ways; I could not be happier. First, the Forschner quality is in every element, from blade to handle to rivets to design. Second, it's thin for a reason, allowing it to slice through even the toughest meat effortlessly. On this point, you will be amazed. Third, it's an elegant knife, and though it weighs practically nothing, it's strong; it provides a full tang, which reaches to the back of the handle. The blade flexes, but not much, and its flat grind provide rigidity from top to bottom when cutting. Fourth, it can double as a utility knife -- letter opener, prep knife, and general kitchen knife. Fifth, it sharpens quickly and holds an edge longer than any knife in the block other than my Wusthof Santoku. The only knife the comes close to this one is Wusthof's 4.5" utility knife at a greater cost, and yes, Wusthof knives are fantastic.

Make sure to hand wash and dry after using. No dishwashers here. The rosewood handle will last a lifetime, but soaking it in water will only dull the wood over time. Consider buying a single knife if you don't need a full set. Other than that, it's a tough knife; one that should definitely be in your knife block!

5.0 out of 5 stars Knives cut thru steak as if it was butter!, July 24, 2010
Amazon Verified Purchase(What's this?)
This review is from: Victorinox 4-3/4-Inch Straight-Edge Pointed-Tip Steak Knife, Set of 6, Rosewood Handles (Kitchen)
Excellent price for the quality of these knives that cut thru steak as if it was butter. The knives came in a very flimsy box. Keep that in mind when you buy them - they should be kept in something so the blades don't become dull. Love them knives!

I was looking for some nice quality steak knives for my husband for a birthday gift. These are fantastic knives and the rosewood handles make them just a little more special than the standard plastic. We don't eat much steak, so it's great to pull these out for company. We like Victorinox products. Only complaint is the box -- not made to last for longterm storage.

5.0 out of 5 stars Great steak knives, February 11, 2011

Generally a big fan of Victorinox kitchen cutlery. High performance/value ratio. These knives have an attractive wood handle and arrived perfectly sharpened. The stamped blade is quite thin, which is fine as it's meant to be employed as an eating utensil not for chopping wood. They are fairly light in the hand as others have mentioned. But I wouldn't say they are flimsy or poorly constructed. The big draw for me was a straight edge I can sharpen as required.

5.0 out of 5 stars Excellent quality knife, October 12, 2011

Forschner knives have been long known as good quality knives, but less expensive than other German knives, such as Henckel and Wusthof. The wooden handles are becoming less available, but reflect the original design of the knife. These are full-tang knives, which means that the blade goes all the way through to the end of the handle (you can see this by the 3 rivets in the wooden handle). These knives are very light in weight, yet perfectly balanced. The blades are sharp, and stay sharp. You will not saw meat with these knives, but rather slice easily through the toughest meat.

I have owned these & other Forschner knives for decades, and have been very satisfied with them. Many butcher shops still use Forschner knives as well.

5.0 out of 5 stars AMAZING STEAK KNIVES!, May 20, 2011

This review is from: Victorinox 4-3/4-Inch Straight-Edge Pointed-Tip Steak Knife, Set of 6, Rosewood Handles (Kitchen)
This steak knife set is amazing as well as beautiful. I'll grab one of these to chop up vegetables as they are just incredibly sharp. I want another set for entertaining 12 friends at a sit-down meal. It is as if everything I cut is BUTTER! The blades cut with so very little effort on my part. I stashed my old set - a well respected brand that NEVER were as sharp as these - in the container these came in and then promptly threw them out - the box is nothing to speak of but who cares? The product is top-notch. Two thumbs up!

I purchased these over a year ago and am very pleased with them. We don't use them as an everyday knife but do use them often. They are very sharp and cut steak very easily. I do handwash insted of putting them in the dishwasher.

4.0 out of 5 stars A nice knife for the price., December 22, 2011
Amazon Verified Purchase(What's this?)
This review is from: Victorinox 4-3/4-Inch Straight-Edge Pointed-Tip Steak Knife, Set of 6, Rosewood Handles (Kitchen)
These are nice steak knives, but they are not expensive, fine German knives. If you are looking for the heft of an expensive Wusthof or Henckel, you need to buy one of those. These will not satisfy you. I have to admit, I prefer those, but, for what they are, these are quite nice.

The steel, while somewhat thin, takes and seems to hold a nice edge. They have a full-length tang (90% anyway) and the knife is held together by 3 rivets. There are some tool marks on the rivets. I have tried using both a standard sharpening steel (Henckel) and a diamond impregnated 10" steel. Both put a nice edge on the knife.

The rosewood handles are nice but have very little finish on them. You will likely need to use lots of mineral oil. BTW, you would NEVER want to put theses in the dishwasher.

Overall, a pretty nice mid-range steak knife for what I consider to be a decent price.

5.0 out of 5 stars Cuts like butter, October 16, 2011

I love these knives. They cut like butter through any type of meat. I've even used them to cut fat off of raw meat. Serrated knives catch small shreds of meat on the edge that must be pulled off during cleaning, but these knives are smooth and do not have that problem. I would definitely buy them again.
