This young pasteurized Manchego cheese is a part of a remarkable family of sheep's milk cheeses from La Mancha. The Villajos family has created an extraordinary line of cheeses due to cheese making skills learned from generations past, their limited family production and meticulous attention to detail. Aged for three months in order to mature, Villajos young Manchego is mild and delightfully flavorful. The first time you taste this young sheep's milk cheese you will know that this is a quality product -- made by hand. It is a satisfying experience! Villajos cheese is produced in a remote village in La Mancha. Following traditional methods, Beni, the Master cheese maker, makes their cheeses at a small facility that originally was the Villajos family home! They use pure fresh ewe's milk from the unique Manchega breed of sheep that graze in the pastures surrounding the village. Their flagship cheese has been awarded four Gran Selección prizes in 2002, 2003, 2005 and 2006 by the regional Government of Castilla -- La Mancha. It is a hitherto unheard of accomplishment. Needless to say, it bears the seal of the Denomination of Origin, verifying its authenticity. Traditionally, slices or wedges of this young cheese are served as tapas or snacks with olives, accompanied by Manzanilla, fino sherry or beer. Many times Manchego is served as a light dessert accompanied by Membrillo, fig wheels, fresh fruit and honey.
