Olio Taibi olive oils are "unfiltered". We choose not to filter away precious antioxidant particles that if removed would decrease the wholesomeness of the olive oil. As a result, our olive oils are a bit cloudy and may have some small floating particles. This is normal for unfiltered artisan olive oils. Also, all our bottles are hand filled. This sometimes translates into the fact that a bottle may contain slightly more olive oil than another.

This oil is delicious! Just tonight I enjoyed some handmade ravioli with Olio Taibi Nocellara and a bit of fresh ground reggiano parmigiano. This oil has a delightful, robust flavor--not too strong for pasta.
