I think I may have answered part of my question just by going to the manufacturer's site:

8 cups of raw rice creates *16* cups of rice - it's a 4.2 QT pot.

I left a message for the VitaClay folks to see if they have any opinion in regards to brewing chinese herbs - maybe they'll reply here too :)
