My old jelly roll pan came to the end of its life, and I had purchased a supermarket Good Cook non-stick cookie sheet as a temporary cheap fix until I could justify getting the Vollrath recommended by Cook's Illustrated. Long story short, my cheap fix turned out to be SO cheap that it became much more temporary than I had intended: my Vollrath arrived yesterday, and all I can say is WOW. It is four times thicker than the cheap cookie sheet, two inches longer (which makes a big difference), and perfectly flat. The smooth, one-piece construction promises easy cleaning, and the simplicity of the design looks so basically professional that I'm proud to have one in my kitchen. This is a sturdy, solid piece of equipment. I plan to order one or two more in time for the holidays - baking gingerbread house pieces will be a snap!

One note - there is a quarter-inch hole at one end, presumably for hanging on a hook. You can just barely see it in the picture. I missed it and was surprised when my order arrived.

Update 7/2/09: I've owned two of these beauties for quite some time now, and they are still going strong. One of the sheets has some minor finish blemishes, but it doesn't seem to affect performance.

If I could fit more than two sheets into my oven, I'd get more. Based on two years of regular use, I expect they will last a lifetime, which makes them a great buy at this price.

I purchased this after reading a review in Cooks Illustrated. I had been burning cookies badly and after switching to the Vollrath cookie sheet with a sheet of parchment paper, no more burnt cookies. The sheet is sturdy and does not warp. The lack of sides on two edges makes it easy to slid the cookies off of the sheet to a cooling rack, sweet.

I purchased this pan through a different company. Cookies cook evenly with good color. Can be used with parchment paper, Silpat but also used with cooking spray. Worked great with all. Much better than other cookies sheets on the market. Definitely a must have if you love cookies.

Chiming in to agree with all the ecstatic reviews of this Cook's-recommended cookie sheet; I've owned them for several years and once you try these, you'll refuse to make cookies on anything else. This is the bakeware of your dreams. They're so well-made, they're actually beautiful, if a cookie sheet can be that.

They are very streamlined smooth metal, no non-stick surface to deteriorate, so they last a lifetime. So thick and heavy, they make other sheets look like cheap floppy children's toys. Flatter than flat and they stay that way. My cookies come out better than they ever had - but there's such an upgrade in baking quality that I actually had to change the way I bake. Because of how well they conduct heat, I had to move them from the lower-middle to the middle rack to avoid having cookies spread too much. Heat distribution is so good that every cookie comes out the same regardless of where it was in the oven. Browning is perfect and removing them is so easy I don't even follow Cook's advice to use parchment paper.

They do retain heat for a very long time, and newbies need to know to not put cookie dough onto a hot cookie sheet; the cookies will spread too much in the oven. If you want to use your sheet again before it cools, wash it in hot water which you then gradually turn to warm and then to cool. Just don't make the temperature change quickly, to avoid shocking the metal. And be sure to use a potholder to put it into the sink!

They also retain cold for a long time, which is a huge bonus if are working with buttery dough, especially butter cookies, the kind you decorate at Christmas. I roll out dough between two sheets of plastic, then chill the layers in the freezer atop a cookie sheet.

Fantastic, that is all that I can say. I purchased two of these on the recommendation first by Cooks Illustrated and second by the positive comments of the other purchasers. I've just made my first batch of the traditional peanut butter blossom cookies that I have made for many years. I had no idea that they could turn out so well. I've always thought that it was my cooking technique that caused the uneven cooking, but now realize it was due to the cheap pans that I had been using. The cookies cooked sooo evenly. They just slid right off the pan with hardly a touch of the spatula, which was needed only to guide them where I wanted them placed on the cooling rack. I'll have to admit that on putting my first batch into the oven, I didn't realize how smooth the pan was and one of the balls rolled off the pan. I was more careful on the following batches. There was absolutely no need to use parchment paper at all; in fact I think it would have gotten in the way and would have been a waste of money to use it. Cleanup was a breeze, and the pans still looked brand new when I was done. The other commenter is definitely right that the pans do hold their heat. Even though I was cycling two pans, they were still too warm to put a new batch of cookies on it when I wanted to start another batch. I resolved this by running room temperature water on the backside of the pans AFTER they had cooled enough that I could pick them up with my bare hands. I didn't want to risk shocking the pans and possibly causing them to warp. The only thing that I can say is I wish I would have bought these years ago and they are well worth their price.
