FYI... here is what Wusthof said: Hi, Serrated edge knives actually never need to be sharpened. The way the blades are made, the part that needs to stay sharp never hits a cutting surface so it should not ever go dull. The fine ceramic side will hone your blade. With that said, it does take a little steel off the knife so a steel is prefered. But if you are looking for ease of use the ceramic side should hone you knives nicely.

the toold has a separate scissor sharpener; you put both blades through the scissor sharpener on each side of the blade and the make a scissor "cutting" motion. Works pretty well.

Yes, this sharpener will ruin your santoku. It is made for European/American knives, which are sharpened at a 20 degree angle. Wusthof does make a similar sharpener specifically for santoku knives.
