Although this is a stamped blade, it is a very well made knife. Instead of a 'tooth' style serrated blade, it has a scalloped edge. It works beautifully on bread of any kind, cuts right through any crust without crushing the bread. Also cuts cakes cleanly. For bagels it works best if you lay the bagel flat.
I've also used it to carve boneless roasts with good results. It doesn't carve well though for turkeys and chickens (but then it's not designed for that task.
I've had this knife for 2 years and it cuts cleanly every time and supposedly will never need sharpening. Time will tell on that one.
I love crusty European-style breads, and this knife slices them with ease--no tearing, crushing, or crumbling. Crusty bread isn't all it cuts easily. As I was cleaning my kitchen countertop one day, the knife was lying out, and I wiped too close to it with the sponge. The back of one finger barely grazed the blade in passing, but the edge laid my finger open nearly to the bone. Dull guy, sharp knife!
My kitchen is full of knives, all sorts, and all work well. None cost what this single knife cost. But I have two bread knives and though they both cut through soft, homemade bread with no problem, neither could cut the crusty artisan breads I love dearly and buy from a fabulous store. Struggling to cut these wonderful breads was always a nightmare. I finally decided to splurge on a really good knife (hopefully) and bought this one, which for ME is expensive. Really, I thought, $45 for a single knife! Well: the money was well spent. I have just sliced up a loaf of wonderful crusty bread as though I was using a laser, not a knife. Lesson learned. Or re-learned: always buy the best quality you can afford. For those who cannot afford $100--or more--for a single knife (certainly I can't), this knife makes me realize that there is superb quality at a price I can--barely--afford. Wow! I think I'll start buying some other knives from this line (say, one a year?).
And this knife does the job beautifully, but(and this is not the knife's fault) but you DO need to be sure you keep the cutting edge WELL clear of your other hand or fingers, I sliced off some skin from a knuckle without ever feeling it until I was dripping red on the cutting board, my fault totally.
This is a wonderful bread knife and slices cleanly through crusty breads with ease and soft breads without crushing or ruining the bread and the slice. It is just the right length to get an even sliceing motion without sawing back and forth excessively and has worked beautifully on any breads I have used it on. As with my review of the Wusthof Gourmet Tomato knife I give it 4 stars instead of 5, not because of performance, but because of the lesser quality of the handle components (as with all Wusthof Gourmet products lately).
I have always purchased the Gourmet series as they were solid, of good quality and well priced. Seems that to stay at comparable pricing points the quality has been ratcheted down just a bit. Once it impacts the feel of using the knives I might want to move onto another series or brand. I would much rather pay a few dollars more to maintain the same feel and quality.
I ordered this knife as a Christmas present for my husband. We have a few Wusthofs in our collection and were in need of a bread knife. This arrived really quickly! On the day of it's arrival, my husband called me and said he was going to go out shopping for a bread knife! When I couldn't talk him out of it, I had to tell him what I got him for Christmas. He was very happy with the brand/gift.
Wusthof knives are excellent - and they make wonderful wedding presents, too! One of my favorite gifts that we received was a small knife for chopping! I use it all the time.
My wife bakes fresh bread every week, and this knife has proven to be a valuable tool in the kitchen. It consistently slices through the more dense whole grain bread with ease. It's well-designed and sturdy. After nearly a year of using it, we strongly feel that it's worth every penny.
I thought it was a great buy, although not quite the quality of the "Classic" Wusthof line, but a very good quality knife with great function for cutting bread or anything that a deep serrated knife is used for.
