Wires necessary,

A hand held wire type of cheese slicer is great. Doesn't matter what cheese (soft or hard) this will slice through it without a problem, that is until the wire breaks rendering it useless. I recently ordered a Chantal model with extra wires (the wires are ordered separately under the description "Chantal Kitchen Tools Stainless Set/4 Replacement Wires for KG-CHS11 Wire Cheese Slicer") and found that these wires fit the WMF model. So now I have 2 working cheese slicers with extra wires. Make sure you order an ample supply of wires as they usually last a few months depending on your cheese usage.

The best cheese slicer,
By A Customer
This review is from: WMF Profi Plus Stainless-Steel Cheese Slicer (Kitchen)
For evenly sliced cheese, this is the easiest to use cheese slicer I've ever used. Its only drawback occurs when the cutting wire break, which it eventually does, because the only place I know of to get them is directly from a source in Germany. I wish Amazon would carry replacement wires as well as carry this cheese slicer again.

Wire breaks on a regular basis,
By Palmynz (New Zealand) - See all my reviews
This review is from: WMF Profi Plus Stainless-Steel Cheese Slicer (Kitchen)
I agree with the other reviews, its great but very expensive to run, the wire breaks often and at $10 for 3 its expensive. It appears the knots at the end of the wires undo rendering the wire useless. I have many WMF items and this is the only one I am dissapointed with.

Great slicer but no replacement wires available,

This slicer worked great and I was very happy with it until the wire broke at the very end where it anchors and I couldn't fix it or find replacement wires. One of the reviews here suggest "Chantal Kitchen Tools Stainless Set/4 Replacement Wires for KG-CHS11 Wire Cheese Slicer" so I plugged it in, and Amazon brought up the picture but said it was unavailable. So my $20 cheese slicer that I loved lasted 7 1/2 months and is dead. Too bad. So now I'll order the cheapie to replace it so that at least when it breaks I'll be out $5 and toss it for another.

Ordinarily, I'm fanatically devoted to Rösle tools...,

...but in this case I think WMF have done a better job.
With Rösle's similar design (i.e. two-sided, with a handle parallel to the cut), sometimes I wonder whether both sides are necessary, as the difference in thickness is slight. And if you turn the screw to tighten the wire--in hopes of making the narrow side more narrow--you risk snapping off the wire, probably breaking it (though it might be possible to reattach, if you're lucky). To be fair, this type of design is inherently fragile I'm guessing, and I doubt WMF's knife is immune. However I have yet to break it, while I've already broken two of the Rösle slicers. With WMF's slicer I find it easy to produce consistent paper-thin slices even with relatively-hard cheeses. As is evident, this is my preference; I'll flip to the other side only if someone else prefers their cheese slices to be thicker. If you're accustomed to the perpendicular-handled style, at first you may find this type of slicer confusing: "When I get near the bottom, how do I finish slicing off the piece?" It's a skill and requires practice. But I'm clumsy--and have weak hands, due to a disability--so if I can do it, I'm sure almost anyone can figure it out.

Had similar cheese slicer before but company quit making it. Was glad to find this. Doesn't take much space in drawer & love having the option of 2
widths. Product I feel is a necessity.

Works Well Until it Breaks,
By Fonz "Fonz" (Columbus, Ohio) - See all my reviews

Broke after only a few uses (wire won't stay taut). Worked well when it wasn't broken. Thought I just needed to replace the wire, but the broken part was actually an integral part of the slicer.

Works great on the softer cheeses. Easy to clean, just pop it in the dish washer. Perfect size slices.

Only used this a few times before it broke when slicing some hard Italian cheese. Cannot recommend the product.
