As with all The Wasabi Black knives, your chef's knife is made with Daido 1K6 high-carbon, stainless steel for superior edge retention, and embellished with the Japanese characters for "wasabi". The Wasabi line of knives features traditional Japanese blade styling, and The 8-inch Chef's knife is no exception. Although it has a traditional blade-style, it is paired with a uniquely modern handle material, polypropylene blended with bamboo powder, and impregnated with an antibacterial agent for super clean food preparation.

A very nice knife, especially for the price. It's very well-balanced and comfortable to use. My Shun knives are designed for a right-handed user; this knife can be easily used by both left- and right-handers.

My mother-in-law wanted to replace her $40 multi-knife set because those knifes would not stay sharp. We purchased three KAI Wasabi Black knives for her (Santoku, 8" Chef's, and 6" Utility) as well as the Better Houseware 2404/12 Bamboo Magnetic Bar.

We find the knives to be sharp and comfortable. They definitely keep the sharp edge longer than her old knives. Plus, her counter looks much neater with the huge knife block gone. These knives come in nice boxes and would make a great present.

One thing that puzzles me is why Amazon calls these knives "SHUN Wasabi...". I did not find any reference to Shun on the knife boxes. I understand that the cutlery maker KAI that makes Wasabi line also makes Shun, but that is like calling Scion a Lexus.

I bought 3 Kai Wasabi's: a chef's knife, a santoku, and a yanagiba. They're all great knives.

The steel on these knives is very good. They're not super hard, so they won't achieve the same type of razor edge other more expensive knives will, but I had no trouble sharpening them up to 8000 grit and easily shaving hairs off my arm. They definitely achieved a better edge than any other knife in the price range I've used. The knife - properly cared for - will maintain it's edge for a pretty good amount of time, too. Again, doing so better than other knives in the same price range. The blades also have a fairly thin profile which makes it nice for cutting through stiffer foods as it minimizes the prying/splitting affect. Being fairly thin, they're also quite light blades - There isn't a whole lot of heft to them. This may bother some people but it's a personal preference thing, and, I prefer a nice thin blade.

Overall these are solid knives and excellent value. You would be hard pressed to find better knives at the same price.

I use Kai Shun knives regularly, and bought this one as an extra. Its a fabulous knife. Its comfortable, has an excellent blade, handles superbly. The only con is, personally i prefer a heavier knife for more control, this one is lightweight. I don't know if I have an expectation that's unreasonable for the price or not, but overall its is an absolute amazing knife for its price and i would highly recommend it.

I have been using this knife as my primary tool in a high volume commercial kitchen from prepping to slicing steaks. This knife holds an edge for a WHILE. Last time I sharpened it was in December and it's still really sharp. As long as you maintain it with a steel daily, this knife will never let you down. I have used Shun's and Wusthof's and nothing compares to this knives price.

If you only want to spend less than $40, this is a good choice. It's light and well balanced. I don't use it everyday,but find myself gravitating to it more and more. I have'nt tried to sharpen it yet and hope it will hold and edge,but it does feel great in my hand.
