The quintessence of mushroom,

I adore Watkins Mushroom Ketchup so much that I now buy it by the case. I discovered it in London perhaps a decade ago, when it was 99 pence at a Sainsbury's food store. Now I have to pay $7.95 a bottle plus shipping, but it's worth it. I give a bottle to very grateful friends once in a while when I feel very generous. My favorite use for it is as a light sauce on grilled meat or chops. It is salty and intense, like Worchestershire. A weak equivalent is mushroom soy sauce in an Asian market. But get this one if you can.

It is excellent for beef or lamb dishes, however I especially love for making meat pies.
