Book Description

When life gets busy, eating good, nutritious food can be a challenge. The goal of this book is to offer some healthy and delicious meal ideas for quick Weeknight Dinners that are 30 minutes or less to prepare.

Our mission was to keep these recipes simple, affordable, quick-to-make, healthy, and practical. The collection includes a wide range of noodle and rice dishes that can be quickly cooked on the stovetop, quick breads, tasty baked main dishes, and of course, some desserts for mid-week treats. All of the recipes use easy-to-make ingredients from scratch.

As a child, I remember my mom preparing homemade food from scratch for us every night for dinner. She made it seem effortless. I learned from her that the secret to easy weeknight cooking was having a reliable and easily adaptable collection of recipes to turn to when you have little time. We hope Weeknight Dinners is your secret to healthy, quick home cooking.

This collection of quick and healthy Weeknight Dinner recipes includes:

Strawberry Spinach Salad with Feta and Sweet Pecans

5.0 out of 5 stars No more takeouts for me March 17, 2012

Wow - this is no hastily cobbled together collection of tired recipes requiring canned soup or other quick fix ingredients, but instead a mouth watering collection of gourmet midweek dinners that anyone can make, and everyone will love.

Beautifully photographed and formatted for the Kindle, this recipe book is one of the finest I have purchased, and should be the standard that all other Kindle cookery authors should aspire to.

I rather liked it!

5.0 out of 5 stars Nice Surprise March 23, 2012
Format:Kindle Edition|Amazon Verified Purchase
There is a nicely formatted and hyperlinked table of contents.

The pictures are lovely, the text is clean and formatted well, and I did not spot any egregious errors. There are amusing quotes sprinkled throughout, and I particularly liked the Wilde quote at the beginning of the salad section.

The introduction contains a major plus: "None of the recipes expect you to have cooked meat or sauces prepared ahead of time, nor do we cook with canned soups." The cobbler filling is made from cherries, not canned filling. The pot pie has no canned soup. The cake has no cake mix.

The recipes are simple yet appear luxurious in the pictures and sound very appealing. I know it's a good cookbook when my mouth starts watering and I want to head for the kitchen and fire up the stove. Even recipes similar to those I've seen before have some interesting variations, like some additional vegetables in the Chicken and Beans Over Rice recipe.

I like it a lot. This one's a keeper.

5.0 out of 5 stars Passion For Food!!! March 14, 2012
Format:Kindle Edition|Amazon Verified Purchase
Nicole and Marie know what it takes to put together a tasty meal. Weeknight Dinners will not disappoint anyone looking to expand their weekly menu and wow their families with wonderfully creative food combinations. I appreciated the clear directions (also known as "method") the authors provide for each recipe. Being a salad lover, I especially found the "Build-a-Salad Guide" to be a nice tool to refer to. Passion for food is a must for any quality cookbook writer and these ladies have it!
