Former chefs Wise and Hoffman (Good and Plenty, LJ 12/88) want their readers to take another look at the microwave oven and realize that it can do more than thaw, reheat, and make popcorn. Whether home cooks will start using their microwave to make fruit butters or preserves, or to make (some) recipes that take almost as long as the stove-top version but save on clean-up time, is an open question. In any case, the authors bring impressive credentials to their task. Their recipes?more than 350?are good, and many of their ideas are clever, such as using the microwave to make dried fruits or pickles and condiments of all sorts. Sometimes the ever-so-enthusiastic recipe notes verge on the precious or are slightly off the mark (fish stock "takes a mere 25 minutes in the microwave"?but that's how long most French chefs simmer it). Barbara Kafka's Microwave Gourmet cookbooks became the standard, but this one may well prompt busy cooks to look again. For most collections.

I cook in my microwave now. This book is wonderful. There are great soup recipes. My favorite are Chicken Tortilla and Minestrone. All the vergetables are cover with directions on how to get the best flavors. This book also tells you what you cannot cook well in the microwave. And the price is fantastic! This is great for a first time cook too.

I found 2 recipes in this entire book that are quick, easy-to-do recipes. If you're looking for fancy dishes you can make in the microwave, this is for you, not for the college kid looking for something simple.

This book shows how the microwave can be used for preparing many traditional dishes that ordinarily would take too much time or attention for me to consider. For example, the basic risotto recipe takes about 30 minutes total -- and it is delicious. The authors include several variations to the basic recipe as well, incorporating sausage, shrimp, mushrooms, etc. Microwave corn on the cob is a wonderful summer recipe. Using the microwave you can enjoy preparing as well as eating this dish -- because you don't have to heat up your kitchen by boiling a large pot of water. Another very helpful thing that the authors do is tell you flat out when a dish is NOT microwavable, such as preparing eggs, breads, and whole roasts.
