Earth Balance shortening is pretty much just a healthier version of Crisco. Non-hydrogenated vegetable fat, vs Crisco's hydrogenated fat. I haven't used Crisco in a really long time, so not sure if it's entirely veggie-based, but if it is, it should work in a pinch. And any brand of vegan margarine works for the buttery crust. Some non-vegan companies make vegan margarines. When I can't find Earth Balance, I look for the vegan Smart Balance. Their old packaging didn't scream VEGAN, but if you scrutinize the labels, you might find one. Earth Balance is my go-to vegan butter for baking mostly because they sell them in handy sticks.
