I can't find white whole wheat flour anywhere in my area anymore, so I had to order it. I usually got King Arthur's White Wheat flour, but they don't sell it anywhere near me anymore.

So far, it's good, although King Arthur's White Wheat is a little better. The Hodgson Mill variety still has some of the wheat flour taste, though I think I had a better taste if I sifted it before using. However, when it comes to ordering online in bulk, Hodgson Mill is far cheaper than King Arthur's, so I'll still go with Hodgson Mill.

I still love the stuff. White whole wheat flour is very heavy, so I usually mix it with white, cake, or pastry flour to make it lighter. It's got a protein level closer to bread flour. I find a 50/50 mix with cake or pastry flour works very well.

When ordering, look for sweet spots when it comes to shipping. There's one in the $15-20 range.

This product is not available in my area, so I was delighted to find it on Amazon. I ordered 35 pounds and so, got an excellent price and had enough to share with a friend. This is flour that makes a difference in one's baking and will be wanted again.
